Instant Pot Blueberry Cake Recipe

A few years ago, I shared our Instant Pot Strawberry Cake and it went crazy!

So many people had not tried using their Instant Pot to make a dessert before (other than cheesecake) and were surprised that you could make a perfect cake with pressure cooking.

We’ve made several Instant Pot desserts since then – from Dulce de Leche Brownies to Pumpkin Bread Pudding (and of course, plenty of cheesecakes) but that Strawberry Cake has remained a favorite, so I thought we’d try something new with a blueberry version!

This blueberry cake looks like a cobbler at first peek, but it is a spongy, light cake with a light vanilla taste that works as the perfect base for those juicy, sweet and tangy blueberries to really burst on your tastebuds.

It needs no decoration, although you could add a sprinkle of powdered icing sugar, if desired. I just love the simplicity of this cake and it serves as the perfect reminder that sometimes less is more when it comes to the perfect dessert.

While I made our simple 7-ingredient cake from scratch, you can alternatively use a boxed cake mix for this recipe and just add in the blueberries.

What is the cake setting on the Instant Pot? Some of the newer models of Instant Pot (like the Lux 6qt or Ultra 6qt) actually have a cake setting! But, I’m working with two models that don’t have a dedicated cake setting – as I’m imagining most readers are, too. For a standard Instant Pot, just use the Manual Pressure Cooking setting for cakes.

Can you use Pyrex in Instant Pot? Anything you put in the oven, you can put in your Instant Pot! If you are cooking with Pyrex, you may need to adjust your cooking time slightly. You can also purchase an Instant Pot cake pan with handle, which would make removing this cake so much easier.

If you typically cook savoury dishes in your Instant Pot, you may want to look at purchasing some extra sealing rings to ensure that your cake doesn’t take on a savoury flavor from your other recipes.

Tip: you can also swap out the homemade cake batter for a boxed cake, if desired. Note that a boxed cake mix will make enough batter for two cakes.

Kitchen Tools You May Find Helpful

  • Instant Pot
  • Baking dish that fits inside IP (I used a Corelle ramekin) – you can also do small individual ones, but that seemed like too much work. There is also a Instant Pot cake pan with handle
  • Trivet that came with your IP
  • Measuring cups and spoons
  • Sharp kitchen knife
  • Extra sealing rings <– highly recommended if you cook with a lot of garlic or seasonings in your Instant Pot normally

How to Make Cake in your Instant Pot

Grease a ramekin or baking dish and set aside.

Place the blueberries in a medium-sized bowl and sprinkle on 1 Tablespoon of the flour.

Gently stir to coat the blueberries in the flour. Set aside.

In a large bowl, whisk together the flour, sugar and baking powder.

Add the milk, butter and vanilla extract. Mix well, then fold in the blueberries.

Place the trivet in the IP and add 1 cup of water.

Place the ramekin/baking dish on the trivet and secure the lid.

Select High Pressure for 23 minutes. Natural release.

Ingredients

  • 1 1/4 cups all purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 3/4 cups milk
  • 1/3 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup Blueberries

Instructions

  1. This is a favorite by our family. I’ve printed and used this recipe 5 times now. This last time, I made 2 cakes and topped with buttercream icing for my husbands birthday. Everyone LOVED it. Perfect texture.

  2. I’m confused, in the video you put 14 minutes and on the written part says 23 minutes. How many minutes are we supposed to select in the instant pot?

    1. You can cook the cake in the Instant Pot for less than 23 minutes, depending on the cooking container, but to keep things easier for the directions I’ve just said 23 minutes. (Because in my IP strawberry cake recipe where I tried to show different times for different cooking containers, it caused a lot of confusion and people had undercooked cakes.)

  3. Can you put the cake batter directly into the instant pot, inside the normal container, or does it have to be in a ramekin or something other than the origal?

    1. Yes, it absolutely needs to be in a separate container or it will give you a burn notice quickly. The instant pot depends on the water so this cake is essentially “steamed” to be cooked.
