Instant Pot Meatball Sandwich Recipe
This instant pot thing is a full-on obsession right now. I use mine several times a week and am honestly considering buying a second so that I can meal prep for the week even easier!
Even simple recipes, like meatball sandwiches, are so much easier when prepped in the instant pot.
While you could definitely just cook up some meatballs, slap some sauce on it and call it a day, the reason I love my Instant Pot is that it helps me achieve that same level of flavor and tenderness that I would usually have to slow cook those meatballs all day to achieve.
Whether you use store-bought meatballs or homemade, this method results in super tender, fall-apart meatballs with perfectly cooked veggies that blend right into the flavorful sauce. It’s a perfect busy weeknight meal that is tastier and more budget-friendly than stopping for meatball subs in between the school run and extra-curriculars.
(They would also be great for a cook-out or for meal prepping and just reheating as needed with rice or pasta.)

Ingredients for Instant Pot Meatball Sandwiches
- 2 Tablespoons olive oil
- 12-16 meatballs
- 1/2 cup red wine
- 3 sweet bell peppers or 1 jar cooked peppers, chopped
- 1 small onion, chopped
- 5-6 cloves garlic
- 1/2 cup red wine
- 1-10oz can tomato sauce
- 4 sub-style buns
- Cheese, optional – for serving
Tip: for homemade meatballs, combine 1/2 lb beef with 1/2 lb pork, 1 egg and Italian-style breadcrumbs or crushed pork rinds until you reach your desired consistency.

How to Make Easy Meatball Sandwiches
Place the olive oil in your Instant Pot and select “saute” setting.
Once the oil is hot, add your meatballs and sear until browned all over, stirring as needed.
Add the red wine to deglaze the pot.
Add the chopped vegetables and cook until the onion is translucent.
Add the tomato sauce and turn off the IP.
Secure the lid and select “meat/stew” setting for 10 minutes (2 if the meatballs are precooked).
Allow to natural release and then serve on sub-style buns with a sprinkle of cheese or parsley.
