These baked garlic Parmesan edamames are addictively crunchy and satisfying while being delicious and nutritious. They have the cheesy nuttiness of Parmesan with the zippy tang of garlic complemented by the buttery flavor and texture of edamame.
I enjoy these crunchy, baked edamame on their own as a little protein-packed and fibre-rich snack but they are also great in salads, sprinkled for crunch on stir fries, etc. I love them as an alternative to croutons when I’m trying to hit protein and fibre goals without feeling deprived.
Our garlic Parmesan edamame are a great alternative to nuts if your child likes a crunchy snack to take to school or extra-curricular activities.
While our recipe uses shelled edamame, you can use this recipe to prepare whole edamame without needing to adapt the recipe.
Garlic Parmesan Edamame Variations:
- Use garlic salt and nutritional yeast for a similar flavor profile.
- Use favorite seasoning blends to make roasted edamame – ranch seasoning, taco seasoning, etc.
- To store this recipe outside of the fridge (and for longer), omit the olive oil called for in this recipe.
- Swap out the edamame for chickpeas for a soy-free alternative.
What is Edamame? Edamame is a Japanese word to describe underripe, green soybeans. Edamame is a great source of protein and fibre and has become popular in the West thanks to its omnipresence as free appetizer at sushi restaurants.
Where to find edamame: You’ll often find them in the frozen section at major grocery stores and they are also available at Asian grocers if you’re lucky enough to have one near you.
How long to bake frozen edamame? I recommend that you thaw your edamame before proceeding with this recipe so that the garlic salt and Parmesan cheese will stick while cooking. To quickly thaw the edamame, rinse under room-temp water and allow to sit as you prepare the other ingredients and preheat the oven.
If your edamame is still somewhat frozen when you make this recipe, you may need to increase the cooking time to 30-45 minutes.
How to store garlic Parmesan edamame: If you omit the olive oil, you can store in cool, dry place for 1-3 months, if refrigerated up to 6 months.
If using olive oil, these must be stored in the fridge for up 3 months.

- Shredded Parmesan Cheese, or more to taste

How to Make Baked Edamame
Preheat oven to 400F
Place edamame in a medium-sized bowl and drizzle on olive oil, then toss to coat.
Sprinkle on seasoning, toss to coat, then stir in Parmesan cheese.
Fold edamame out onto a cookie sheet and spread into an even layer.
Bake for 15-18 minutes, flipping halfway through the baking time.
Allow the edamame to cool before serving.
Makes 3 cups. Best served the same day it is made.
