Our latest addition to our series of French Toast Roll-up Recipes, today’s recipe is a mash-up of two favorite brunch staples: Cinnamon Buns and French Toast! Our Cinnamon Bun French Toast Roll-ups Recipe is super easy to whip up, while tasting incredibly decadent. It’s a great option for both busy weekday mornings or indulgent brunch spreads on the weekend.

Cinnamon Roll French Toast Roll-ups Recipe
French Toast Roll-ups are now a way of life in our house.
We’ve developed over 5 different takes on this new breakfast staple and today’s is definitely our most indulgent yet! While not exactly a healthy breakfast choice, it’s nice for a treat and can be rounded out with a side of fruit.
Cinnamon Roll French Toast Roll-ups combine the golden, crunchy exterior of a classic French toast with the custardy, softness of the bread’s interior and a melt-in-your-mouth, silky cinnamon-sugar filling that tastes just like the filling of your favorite cinnamon buns! All in a convenient, dippable format – and with an optional cream cheese frosting drizzle, just to make this breakfast treat extra special.

French Toast Roll-up Variations:

How to store leftover French toast roll-ups: These French toast roll-ups can be stored in the fridge for 2-3 days, or you can freeze in an airtight freezer container or zip-top freezer bags for up to 2 months. (This set of freezer containers is a crazy bargain.)
Can I make these French Toast Roll-ups ahead of time? Yes, you can assemble the roll-ups and store them in an airtight container in the fridge for up to 12 hours before cooking. For longer storage, freeze them before dipping in the egg mixture—then just thaw slightly, dip, and cook as directed.
How do I prevent my French toast rolls from falling apart while frying? This can happen if the bread isn’t rolled flat enough or if too much filling is added. Roll the bread thin so it’s more flexible, and make sure the seam side of the roll is placed down in the pan first to “seal” it as it cooks.
How do I prevent French toast rolls from being soggy in the middle? Soggy centers usually mean the heat was too high, browning the outside before the inside fully cooked. Cook over medium heat, turning the roll-ups frequently, so they cook through evenly. You can also lightly press on them with a spatula while frying to help heat reach the center.

Ingredients for Cinnamon Roll French Toast Roll-ups
- Sliced bread, crusts trimmed
- Unsalted butter
- Brown sugar
- Cinnamon
- White sugar
- Eggs
- Cream or milk
Optional Cream Cheese Drizzle Ingredients:
- Unsalted butter
- Cream cheese
- Powdered sugar
- Vanilla extract

How to Make Cinnamon Roll French Toast Roll-ups
For the cinnamon sugar coating, combine 1 Tablespoon of the cinnamon and the white sugar in a small bowl and set aside.
For the french toast batter, combine the eggs, cream and 1 Tablespoon of the cinnamon and set aside.

For the cinnamon filling, combine the butter, brown sugar and remaining cinnamon in a separate bowl and set aside.
Roll or press each slice of bread until flat and then spread a generous half Tablespoon of the cinnamon filling on the bread.

Roll the bread slice short end to short end.
Repeat with all slices of bread, using up all of the cinnamon filling.
Heat a frying pan over medium heat with a bit of butter or oil.
Dip each roll into the french toast batter and place 4-6 at a time in the frying pan, turning after 2 minutes to cook each side.

Meanwhile, whip up the cream cheese drizzle by combining the butter, cream cheese, sugar and vanilla until completely incorporated.
Remove to a plate and repeat with all remaining rolls.
Roll in the cinnamon-sugar coating (or sprinkle it overtop) and then drizzle the cream cheese overtop.

- 4 Tablespoons cinnamon powder
- 1 Tablespoon white sugar
- 2 eggs
- 2 Tablespoons cream or milk
