These cute pull-apart meatball sliders are a fun and easy weeknight meal made even more delicious and family-friendly with a secret veggie sauce. Cheesy, saucy, meaty sliders that you can even make ahead and freeze for later!

Meatballs are a food group unto themselves in my family.

Growing up with an Italian-Irish father, my dad tried some interesting concoctions with meatballs. Some (meatball tacos) were more successful than others (meatball soup) but what he lacked in culinary talent, he definitely made up for with creativity and a willingness to experiment in the kitchen!

I think it’s safe to say I inherited my dad’s penchant for kitchen experiments and these Pull-Apart Mini Meatball Sandwiches with hidden veggie sauce are definitely a successful experiment!

How to make mini meatball sandwiches with hidden veggie sauce

Ingredients for Mini Meatball Sandwiches

  • 1 small onion, chopped
  • 1 Tablespoon plus 1 teaspoon minced garlic
  • 2 sweet bell peppers, chopped
  • 1-10oz can tomato sauce
  • Salt and pepper, to taste
  • 1/2 cup butter
  • 1/2 cup olive oil
  • 1 Tablespoon dijon mustard
  • 1 Tablespoon Worcestershire sauce
  • 1 sheet sandwich rolls
  • 12 Cooked Perfectly Homestyle Meatballs
  • 1-2 cups mozzarella, shredded
  • Chopped parsley, optional garnish

Tip: For this recipe I used the Homestyle Meatballs, but the Italian-Style, All Natural Chicken or Three Cheese Stuffed Meatballs would also be perfect!

How to Make Mini Meatball Sliders

Preheat your oven to 375F

Defrost your Cooked Perfect Meatballs according to package directions.

In a pot over medium heat, place 1 Tablespoon of butter and your chopped onions and peppers. Saute until the onions are translucent, about 3-5 minutes. Add 1 Tablespoon of the garlic and cook until fragrant, about 1 minute.

Remove from heat and place the softened veggies in a food processor. Add the tomato sauce and puree until smooth.

Place your sandwich “sheet” in your casserole dish and slice through the middle of each row of buns, being careful not to cut all the way through. (About halfway should do it.)

Place about 1/2 to 1 Tablespoon of the hidden veggie sauce in each sandwich “cut” and then insert a meatball into each sandwich. Cover with an additional 1/2 to 1 Tablespoon of sauce.

Sprinkle the mozzarella cheese over the sandwich casserole.

In a pot over medium heat, heat the remaining butter and garlic, olive oil, dijon mustard and Worcestershire sauce until fully incorporated.

Pour the melted butter mixture over the cheese and then cover the entire sandwich casserole with tinfoil.

Bake 20 minutes, until the cheese is melted.

Sprinkle with parsley, if using, and serve.
