Today I’m sharing with you a quick and easy recipe for juicy, tender chicken thighs with a crispy, flavourful skin; this Honey Mustard Chicken Skillet recipe is a new family favorite around here and I hope your family loves it, too!

Honey Mustard Chicken Thighs are flavorful, sweet and tangy chicken with just the right amount of heat that is perfectly cooked, with a golden, crispy skin and succulent, fall-off-the-bone meat. My favorite way to enjoy this honey mustard chicken is chopped up and served on a salad, although it also makes a great main dish.

Honey Mustard Chicken Thighs Recipe

While I mostly use chicken breasts while making chicken recipes, the crispy skin and juicy, darker meat that comes with using chicken thighs is sometimes the best option for a recipe.

You could use chicken breasts to make this honey mustard chicken recipe, however, I encourage you to try it with skin-on chicken thighs and see why I think they are the best option for this recipe!

The result is flavorful, sweet and tangy chicken with just the right amount of heat that is perfectly cooked, with a golden, crispy skin and succulent, fall-off-the-bone meat.

My favorite way to enjoy this honey mustard chicken is chopped up and served on a salad, although it also makes a great main dish. (In the pictures you see in this blog post, I served it alongside my Shaved Brussels Sprouts Salad and cauliflower rice.)

We start this recipe on the stove and finish it up in the oven for the most juicy, tender chicken with crispy skin, thanks to our cast-iron skillet (if you don’t have an oven-proof skillet or dutch oven, you can completely cook the chicken on the stove or transfer the chicken to a baking dish for the baking portion of the recipe).

Honey Mustard Chicken Variations:

  • For a faster cooking time, cut the chicken in 2” pieces.
  • While bone-in chicken thighs are a bit more flavourful and harder to overcook, swap them up for chicken breasts, if desired.
  • Make a creamy pan sauce by adding heavy cream to the liquid in the skillet and bringing to a simmer over medium to medium-high heat. It will thicken as it sets.
  • To take care of your side dishes at the same time, add your veggies directly to the pan (kale, spinach, mushrooms, carrots, broccoli, beans, etc).
  • If you like this recipe but want a twist, you can swap the chicken for fish like salmon filets.

How to store leftovers: leftover honey mustard chicken can be kept in an airtight container in the fridge for up to 3 days.

Can this chicken recipe be frozen? The chicken can be frozen in the marinade or after cooking. To freeze the chicken, store in an airtight ziptop bag or your favorite freezer containers for up to three months. (This set of freezer containers is a crazy bargain.)

Tip: add additional seasoning like thyme, paprika, etc, to your personal preference.

How to Make Honey Mustard Chicken Thighs in a Cast Iron Skillet

Preheat oven to 375F.

Season chicken thighs with cayenne pepper and salt.

Place butter and olive oil in a skillet over medium heat. Once butter is melted and hot, add the chicken and sear on each side until well-browned, about 3-4 minutes per side.

In a small bowl, whisk together the mustards, honey and garlic until completely combined.

Divide the honey-mustard mixture over each chicken thigh and place skillet in the oven.

Bake for 18-20 minutes until chicken reaches an internal temperature of 165F.

Ingredients

  • 5 Chicken Thighs, bone-in and skin-on preferred
  • Salt, to taste
  • 1/2 teaspoon Cayenne Pepper, or more to taste
  • 2 Tablespoon Olive Oil
  • 1 Tablespoons Butter
  • 1 Tablespoon Whole Grain Mustard
  • 1 Tablespoon Honey Mustard
  • 1 Tablespoon Honey, or more to taste
  • 2 Tablespoons Minced Garlic

Instructions
