Homemade Nutella (with Video)
Like most families, Nutella is a staple in our cupboard! I will always buy the store-bought stuff for Nutella baking recipes, but when using as a breakfast spread or a dip for fruit I prefer our Healthy Homemade Nutella with fresh roasted hazelnuts and no refined sugar for a delicious and healthier alternative.
Homemade Nutella Recipe
A rich, flavorful hazelnut chocolate spread with a robust nutty flavor and the perfect hint of sweetness, our healthy homemade nutella recipe is a delicious option for healthy breakfasts or desserts.
Store-bought Nutella comes in at 21g of sugar per 2 Tablespoons and it’s primary (main) ingredient is sugar.
For our recipe, the primary ingredient is hazelnuts and each 2 Tablespoon serving comes in at 1g sugar (according to Very Well Fit’s nutrition calculator) and 5g of protein.
There are two different ways to make our homemade Nutella:
- with cocoa or cacao powder
- with melted dark chocolate
I would say that the melted, dark chocolate version is more close to the original (and I include how to make that in the recipe card notes below), but I think the cocoa powder version is just as delicious, less expensive and also comes in with lower calories than the melted chocolate version.
While I wouldn’t suggest substituting this homemade Nutella for the store-bought version for baking recipes, it’s a great healthy swap for using as a spread or stirring into a variety of recipes.

Do I need to use hazelnut oil to make homemade nutella? No, I highly recommend using hazelnut oil for the best flavor in this recipe, but you can swap in a neutral-flavored oil in it’s place.
If you don’t already have hazelnut oil on hand, it can seem like a pricey purchase for this recipe. However, there are plenty of ways to use the rest of the bottle if you don’t plan to make copious amounts of homemade Nutella:

Do I need to remove hazelnut skins for homemade nutella? Personally, I didn’t remove the hazelnut skins because I like a bit of texture to my nut butters, but if you want your nutella to be as smooth as possible, you will want to remove the skins after roasting. The easiest way to do this is to place the hazelnuts in a clean kitchen towel right after roasting and rubbing them together with the towel.

Tip: you can replace the cocoa powder with melted dark chocolate. Add a touch of vanilla extract for a different flavor profile, if desired.

How to Make Homemade Nutella
Preheat oven to 350F.
Place the hazelnuts in an even layer on a cookie sheet and roast for 12-14 minutes, stirring occasionally to ensure even roasting.
(If your hazelnuts are already roasted, you will still want to warm them up for about 5-8 minutes.)
If you want to remove the hazelnut skins for a smoother final product, place them in a clean kitchen towel, cover and rub together.
Allow the hazelnuts to cool slightly until they are comfortable to touch but not so cool that they are room temperature.
Place the hazelnuts in a food processor and add the maple sugar, cocoa powder (or melted chocolate) and salt.
Puree until the hazelnuts are creamy and as broken down as they seem like they will get. You may need to do allow the food processor to rest a couple times and scrape down the sides through this process, for a total of about 8 minutes.
Add a small amount of Hazelnut Oil to the Nutella to help provide a bit more liquid to aid in breaking down the nuts even further and provide a creamier, less dense final product.
Taste and adjust the Nutella with additional cocoa, chocolate, salt or maple sugar. You can also add a 1/2 teaspoon of vanilla extract, if desired.
Scrap Nutella into a mason jar and store at room temperature for up to 3 weeks. You can alternatively store in the fridge for up to 2 months.

Notes
If you want to use melted dark chocolate instead of cocoa powder use about 1/2 cup to 2/3 cup.
