Greek Beef Kebabs
Whether you’re looking for a BBQ kebab recipe, or a quick 15-minute meal to throw in the oven, these Greek Beef Kebabs are a delicious weekday supper that the whole family will love!
Greek Beef Kebabs Recipe
Okay, I’m going to be honest here.
I love how quick and easy kebabs are for cooking (literally 8 minutes under the broiler), and they look so great on a BBQ party spread – but am I the only mom who’s spent literally 10 minutes threading meat and veggies onto kebabs only to later help her child pull all of the meat and veggies off of those same kebabs in order for your child to eat them!?
It might just be me…
Regardless, there’s no denying that these Greek-inspired beef kebabs are a delicious and quick weekday meal. Ready to eat in 15-20 minutes (depending on the speed of your kebab-threading skills), these kebabs are so succulent and flavorful and their colorful presentation makes eating your veggies super appetizing.
(You could even do a rainbow assortment of veggies – I just stuck to yellow peppers and red onions for that bright burst of color and also because I had one of each leftover from another recipe! Feel free to substitute your chosen veggies in this recipe – tomatoes, zucchini, mushrooms, etc, would all be delicious options.)
I make my own Greek and Lemon Pepper seasonings, and I decided for this recipe to use fresh parsley and thyme (which I already had on hand) and spice things up with the lemon pepper seasoning. You can alternatively do a blend of both Greek and Lemon Pepper Seasonings – or just use Greek and add a heavy hit of lemon juice (and possibly some lemon zest).
You can prepare the meat and marinade in advance (in fact, I highly recommend letting the meat marinade overnight), but I would personally wait to thread them onto the kebabs until just before cooking so that the kebabs are still wet (with water) and won’t burn.

Ingredients for Easy Beef Kebabs

1lb beef, cubed

4 cloves garlic, minced or chopped

1/2 red onion, chopped in 1″ pieces

1 bell pepper, chopped in 1″ pieces

5 springs thyme
-
2 Tablespoons fresh parsley, chopped

1 Tablespoon Greek lemon pepper seasoning
-
3-4 Tablespoons olive oil, as needed
Tip: if possible, marinade the meat overnight for an even better and more developed flavor.
Tip #2: feel free to substitute your preferred veggies in for the red onion and bell pepper.
Kitchen Tools You May Find Helpful
- 8 wooden skewers
- Sharp kitchen knife
- Shallow dish (for soaking skewers)
- Cookie Sheet
- Cutting Board
- Large bowl
- Measuring cups and spoons
How to Make Greek Kebabs
Soak the kebabs in water as you prepare the meat and veggies. Set aside.
Prepare a cookie sheet or baking tray by lining it with tinfoil. Set aside.
In a medium bowl, combine the cubed beef, minced garlic, thyme, parsley and the lemon pepper seasoning. Use enough oil to help everything stick together, approximately 1 1/2 – 2 Tablespoons.
Start threading the veggies and meat cubes in an alternate pattern on your kebabs. We fit 7 cubes of beef per small kebab.
When all meat is threaded on the kebabs, place the prepared kebabs on the prepared tinfoil-lined tray.
Place under the broiler for 8-10 minutes until cooked through (minimum internal temperature of 145F).
If grilling, grill each kebab for 4 minutes on each side, turning once.
