Ginger Lime Salmon
An easy baked salmon recipe with bold flavors, today’s Ginger Lime Baked Salmon is a quick weeknight recipe that can be made using fresh or frozen salmon.
Ginger Lime Salmon Recipe
I try to include seafood at least once a week when planning out my family’s meals because seafood – especially salmon – offers so many healthy fats, vitamins and minerals that aren’t as plentiful in other foods.
However, the cost of fresh seafood has really skyrocketed in the last couple of years, making it harder for me to stay in budget while sticking to these kinds of food ideals. So, I’ve had to learn how to prepare frozen salmon filets which can be a bit trickier to prepare than fresh salmon.
Frozen salmon filets are easier to overcook and a bit harder to infuse with flavor – but that also works to our advantage in that we can really be bold when it comes to the flavors we add to it.
Today’s ginger lime salmon is a tart and tangy salmon recipe with the perfect hint of heat. It’s perfect when you want a light, healthy meal without sacrificing flavor.
I tend to grab the frozen salmon on Sunday, place it on the tinfoil sheets and add the seasoning, and then just pop the sealed tinfoil packs in the fridge until the salmon is ready to cook a day or two later.
You can swap out the salmon called for in this recipe with scallops, tilapia, shrimp, basa, etc- whatever is is the most affordable option that week.
(Some kids may not like the ginger, so feel free to skip adding it to their portions or replace with crushed pineapple.)
Salmon is perfectly cooked when you gently press down on it and the salmon “flakes” or separates down the little lines in the flesh. It should still be a little translucent in the center and have little to no white protein gathering on top. Like steak, you want to avoid cooking salmon past “medium” for the best flavor and texture experience.
The health benefits of salmon are numerous – including omega-3 fatty acids that aid in heart health and fighting inflammation, plenty of B-vitamins known for their brain-boosting power and assisting the central nervous system, as well as being a great source of protein, potassium and selenium. Tip: I served this with cooked wonton noodles and snap peas – just boil the noodles as you would pasta, but then after you are done sauteeing the peas (or whatever vegetable you opt for) in a skillet, add the noodles, 1/4 cup of water and a dash of soy sauce or tamari, to taste.

How to Make Ginger Lime Salmon
Preheat oven to 325ºF.
Cut four 8″ lengths of tin foil.
Place two of the sheets of tinfoil on a baking sheet.
Pat the salmon dry and place two pieces on each sheet of tinfoil.
Season both sides of each piece of salmon with salt and pepper, to personal preference.
Sprinkle the lime juice over the salmon filets, then evenly distribute the ginger overtop.
Place the two remaining lengths of tinfoil overtop and crimp the edges together to make tin foil packets.
Bake the salmon for 12 minutes, then allow to rest for 5 minutes before opening the packets.

Instructions
- Preheat oven to 325ºF.

Don't rush to open the salmon packets - that 5 minute rest is essential for allowing the salmon to finish cooking from residual heat.
