Today’s Bacon-Wrapped Salmon recipe features juicy salmon wrapped in smoky bacon and brushed with maple syrup for a quick, elegant dinner ready in less than 20 minutes. A touch of lemon zest cuts through the richness of this dish, while a thin glaze of maple syrup adds a glossy finish and a whisper of sweetness that balances the salt and smoke of the bacon.

Our bacon-wrapped salmon recipe is crisp on the outside, tender inside and flavored simply with salt, pepper and a hint of lemon and maple. It's smoky, sweet and perfectly flaky. I love the contrast of the smoky, crispy bacon with the juicy, buttery salmon and the bit of heat from the pepper, the zesty citrus and sweet maple syrup.

Bacon-Wrapped Salmon Recipe

Salmon is one of my favorite easy proteins to serve on a busy weeknight, but just because salmon boasts many health benefits doesn’t mean it can’t also be indulgent!

Our bacon-wrapped salmon recipe is crisp on the outside, tender inside and flavored simply with salt, pepper and a hint of lemon and maple.

It’s smoky, sweet and perfectly flaky. I love the contrast of the smoky, crispy bacon with the juicy, buttery salmon and the bit of heat from the pepper, the zesty citrus and sweet maple syrup. It’s perfectly balanced and tastes like something that came from a fancy restaurant… only you’ll have it whipped up and on the table faster than you could drive to a restaurant!

This recipe works so well because as the bacon crisps on the outside, it protects the salmon from overcooking and also infuses it with flavor.

Serve it with roasted vegetables and a side of pasta or rice for a comforting meal or over a bed of greens for something lighter.

Bacon-Wrapped Salmon Variations:

  • Honey-Mustard Glaze: Replace the maple syrup with a mix of honey and Dijon mustard for a tangy, sweet coating.
  • Herb Butter Finish: Add a dab of herb butter (like our homemade compound butter) over the hot salmon filets just before serving to create a subtle sauce as it melts.
  • Spicy Maple Bacon Salmon: Add a pinch of cayenne or a few drops of hot sauce to the maple syrup before brushing.
  • Garlic-Parmesan Twist: Sprinkle grated Parmesan and minced garlic under the bacon before wrapping for extra umami depth.
  • Prosciutto-Wrapped Salmon: Swap bacon for thinly sliced prosciutto for a leaner, saltier variation that cooks more quickly.

Bacon-Wrapped Salmon FAQs

Can I use thick-cut bacon? Thin-cut bacon works best as it cooks and crisps evenly without overcooking the salmon.

How can I tell when the salmon is done? The salmon should flake easily with a fork and reach an internal temperature of 145°F.

Can I use frozen salmon to make bacon-wrapped salmon? Yes, just thaw it completely and pat dry before seasoning to help the bacon adhere and crisp properly.

How to store leftover bacon-wrapped salmon: Leftovers can be kept in an airtight container in the fridge for 3-4 days or wrapped and frozen in a freezer bag or container for up to 2 months. (This set of freezer containers is a crazy bargain.)

  • Basting Brush <– I like these because they are one solid piece and don’t have removable heads for bacteria to get trapped underneath. Plus they are heat-resistant and have a lifetime warranty.
