Today’s Bacon-Wrapped Salmon recipe features juicy salmon wrapped in smoky bacon and brushed with maple syrup for a quick, elegant dinner ready in less than 20 minutes. Salmon is one of my favorite easy proteins to serve on a busy weeknight, but just because salmon boasts many health benefits doesn’t mean it can’t also be indulgent!
Our bacon-wrapped salmon recipe is crisp on the outside, tender inside and flavored simply with salt, pepper and a hint of lemon and maple.
It’s smoky, sweet and perfectly flaky. I love the contrast of the smoky, crispy bacon with the juicy, buttery salmon and the bit of heat from the pepper, the zesty citrus and sweet maple syrup. It’s perfectly balanced and tastes like something that came from a fancy restaurant… only you’ll have it whipped up and on the table faster than you could drive to a restaurant!
This recipe works so well because as the bacon crisps on the outside, it protects the salmon from overcooking and also infuses it with flavor.
Serve it with roasted vegetables and a side of pasta or rice for a comforting meal or over a bed of greens for something lighter.
Bacon-Wrapped Salmon Variations:
- Honey-Mustard Glaze: Replace the maple syrup with a mix of honey and Dijon mustard for a tangy, sweet coating.
- Herb Butter Finish: Add a dab of herb butter (like our homemade compound butter) over the hot salmon filets just before serving to create a subtle sauce as it melts.
- Spicy Maple Bacon Salmon: Add a pinch of cayenne or a few drops of hot sauce to the maple syrup before brushing.
- Garlic-Parmesan Twist: Sprinkle grated Parmesan and minced garlic under the bacon before wrapping for extra umami depth.
- Prosciutto-Wrapped Salmon: Swap bacon for thinly sliced prosciutto for a leaner, saltier variation that cooks more quickly.

How to Make Bacon-Wrapped Salmon
Pat the salmon fillets dry with paper towel.
Season the salmon fillets with salt, pepper and lemon zest, to taste.

Use two strips of bacon to wrap each salmon fillet, overlapping the strips slightly to ensure even coverage after the salmon bakes.
Set your oven to broil.

Place a skillet over medium heat.
Once skillet is hot, place the bacon-wrapped salmon in the pan and cook 2-3 minutes until bacon is lightly browned.
Flip salmon and cook 2 minutes.

Place the skillet in the oven and broil for 3-4 minutes until bacon is cooked to your liking and salmon reaches an internal temperature of 145F.
Drizzle the salmon with maple syrup and brush with a pastry brush to ensure even coverage.
