A quick and easy carrot side dish, these Garlic Parmesan Carrots are a classic side dish that pairs perfectly with just about anything!
Garlic Parmesan Carrots Recipe
Just about any vegetable gets at least 100% more delicious by cooking it with some garlic and sprinkling on some Parmesan.
It’s my go-to method for easy vegetable sides on days when I’m trying to manage 15 different things at once, or I decided to make a main dish that is frustratingly labor intensive and I don’t have the extra time to spend on the side dishes.
For the lack of effort this side dish requires, it turns out some impressively tender, sweet carrots with that perfect hit of acidic garlic and creamy, salty Parmesan. The flavors work together to really enhance the natural sweetness of the carrots. The addition of earthy rosemary is optional, so try these carrots both with and without it to see which version you prefer.
You can prepare these carrots either in the oven or on the stovetop in a skillet. Either way, you want to ensure that the garlic and carrots caramelize a bit to ensure their natural sweetness comes out. (I provide oven directions in the notes section of the recipe card below.)

Garlic Parmesan Carrots Ingredients
- 2 lbs carrots, peeled and cut into coins
- 2 Tablespoons butter
- 2 teaspoons minced garlic
- 1 Tablespoon rosemary, or more to taste
- 1/4 cup shredded Parmesan cheese, to taste

Tip: you can steam the carrots for 3-4 minutes before proceeding with the recipe if you want softer carrots.

How to Make Garlic Parmesan Carrots
Place the butter in a skillet over medium heat.
Once the butter is hot, add the carrots and cook until you reach your desired level of tenderness.
Add the minced garlic and rosemary and stir frequently, for 1-2 minutes until garlic is fragrant.
Remove skillet from heat and add Parmesan cheese.
Serve immediately.

Ingredients
- 2 lbs carrots, peeled and cut into coins
- 2 Tablespoons butter
- 2 teaspoons minced garlic
- 1 Tablespoon rosemary, or more to taste
- 1/4 cup shredded Parmesan cheese, to taste
Instructions
- Place the butter in a skillet over medium heat.
- Once the butter is hot, add the carrots and cook until you reach your desired level of tenderness.
- Add the minced garlic and rosemary and stir frequently, for 1-2 minutes until garlic is fragrant.
- Remove skillet from heat and add Parmesan cheese.
- Serve immediately.
Notes
To prepare these carrots in the oven, melt the butter and toss the carrots with it. Roast at 400F for 10 minutes, then remove and stir in the garlic, rosemary and Parmesan cheese, then return to the oven to continue roasting for 10 more minutes.
