Frozen Bailey’s Recipe

Last summer I got really into coffee frappes, especially when entertaining.

There is something about these grown-up coffee milkshakes that is so much more special than serving up a boring iced coffee, and I got to thinking that it would also be a fun twist on a coffee cocktail!

The trick to a really creamy, smooth and flavorful frappe is taking the time to freeze your milk and your coffee beforehand so that you don’t end up watering down your drink with plain ice. You can freeze both or just one, but avoiding using ice is essential!

(Of course, this recipe still works fine if you’re in a pinch and need to use plain ice, but if you have the time – definitely prep ahead!)

Bailey's Frozen Coffee Cocktail, the ultimate in grown-up indulgence

I’ve now made this recipe a couple of different ways and I like serving it two ways:

  • as a straight-up Bailey’s coffee frappe, with just coffee, Bailey’s and milk
  • as a Bailey’s mocha frappe, with coffee, Bailey’s, milk, cocoa powder and sugar

The mocha frappe version reminds me of the frozen hot chocolate that we enjoyed in New York City’s Serendipity 33 (featured in that cute Kate Beckinsale and John Cusack movie). Only this frozen hot chocolate has a grown-up twist!

It’s really personal preference. I’ve provided the recipes for both versions below so try both and see which one you prefer!

Now, I kept the alcohol content for these frappes pretty light – 2 oz of Bailey’s per cup of coffee. If you want a stronger drink, swap out more of the milk for Bailey’s (or just skip the milk entirely, if you’re so inclined).

This is a fun cocktail recipe for St Patrick’s Day or just a refreshing summer cocktail to enjoy with friends.

Tip: for a stronger drink, swap out more of the milk for Bailey’s.

For a Bailey’s Mocha Frappe:

  • Milk
  • Strong coffee
  • Bailey’s Irish Cream
  • Cocoa powder, optional
  • White Sugar or Maple Syrup, to taste (optional)
  • Maraschino Cherries, garnish

Tip: instead of using cocoa powder and sugar, you can swap in hot chocolate mix.

How to Make a Frozen Bailey’s Cocktail

Ideally, give yourself enough time to freeze your coffee and your milk (or just the coffee) in an ice cube tray for at least 2 hours before making this cocktail.

Place the (frozen) coffee, milk, Bailey’s and sugar (if using) into a smoothie-style blender and puree until smooth.

Divide the frozen cocktail concoction among two glasses, and garnish with a marschino cherry.

Enjoy immediately.

Ingredients

  • 1 cups milk
  • 1 cup strong coffee
  • 4 oz Bailey's Irish Cream
  • 2 Tablespoons cocoa powder, optional
  • 2 teaspoons sugar or maple syrup, to taste (optional)
  • 2 maraschino cherries, garnish

Instructions

  1. Ideally, give yourself enough time to freeze your coffee and your milk (or just the coffee) in an ice cube tray for at least 2 hours before making this cocktail.
