This Bailey’s a la Mode is a fun dessert cocktail that lets you have two of the best things of being an adult (coffee and alcohol) while feeling like a kid!
I first shared this Bailey’s Coffee Float on my friend’s blog, Amanda’s Cookin’.
All though high school I worked at an upscale Greek restaurant and I always found the dessert cocktails interesting and confusing. Why were these grown-ups mixing coffee and alcohol? Don’t they have opposite effects? And why did they need seven different varieties of coffee cocktails?
But… I get it now. Dessert cocktails – especially coffee cocktails — are lighter than a plate of dessert and allow you to have a delicious cocktail to finish off your night without giving in to the sleepy stoupor that can sometimes accompany post-supper cocktails. They are a great option for entertaining – instead of worrying if your guests would prefer dessert, coffee or apertifs after their meal, serve them a dessert coffee cocktail that hits all three!
I thought I was pretty creative with this ice cream coffee cocktail, but apparently ice cream coffees are called “affogatos” and they are really popular in Europe! Jaime Oliver even recommends using leftover desserts (like biscotti or mousse) to take your affogatos up a notch!

Ingredients to Make Bailey’s Affogato
- Coffee
- Bailey’s Irish Cream
- Chocolate Ice Cream
- Chocolate sundae syrup, for garnish
- Cherries, sprinkles, etc, optional garnish

How to Make a Bailey’s Coffee a la Mode
Brew 2 cups of strong coffee in your favorite method.
Measure out 3 oz of Bailey’s into each mug.
Place 2 scoops of chocolate ice cream in each mug and pour 1 cup of coffee overtop.
Garnish as desired and serve immediately.
