Ella and I recently had a strawberry ice cream-themed movie night and had some fun creating healthy supper recipes using freshly picked strawberries. This Strawberry-Peach Salad recipe was the perfect side dish – but with a bit of protein (quinoa, chicken or even a handful of nuts) it would make a great entree salad!
Strawberry Spinach Salad Recipe
Actually, this salad was supposed to be a Strawberry-Peach-Pecan salad but a certain four year old picked all of the pecans out and ate them before I could get any pictures. The fruit and nuts (and not to mention that salty feta cheese) was my way of making a healthy salad a bit more appetizing. My usually not picky eater hates spinach but she ate this salad with no complaints!
We also skipped store-bought dressing by making a simple olive oil and balsamic dressing that really let the ingredients of this salad be the focus. I’m a big believer in serving greens with fats (to aid with proper digestion and absorption).
We paired this strawberry salad with our almond-crusted chicken and fresh strawberry salsa.
Ingredients for a Strawberry-Peach Salad
To make this recipe, you’ll need:
- 5 strawberries, hulled and cut
- 1 peach, pitted and sliced
- 3 cups spinach
- 1/4 cup olive oil
- 1 Tablespoon balsamic vinegar
- 1/4 cup feta cheese, crumbled
- 1/4 cup almonds or pecans
- Salt and pepper, optional to taste

How to Make a Strawberry Summer Salad
Mix the feta cheese, oil, vinegar and optional salt and pepper together.
Add the spinach and coat well.
Toss with the strawberries, peach slices, and optional nuts. Serve.
