Dill Feta Pasta Salad is a light orecchiette pasta dressed simply with olive oil, lemon, fresh dill and salty feta cheese. It delivers the heartiness of a pasta salad with the novelty of fresh summer flavors.

I swear, sometimes I feel like I’m raising a miniature version of my father.

My daughter, Ella, has all of the wit, fashion sense and appetite of my now 60-something father. So, in addition to feeling bullied about my own clothing choices at all times, that also means that this girl demands pasta on a nearly daily basis.

I am someone who could go a month or more without pasta, but if I tried that, I would be facing a ferocious one-girl revolution. So, I have to find easy ways to serve pasta on a regular basis without boring myself to tears since I crave variety.

Today’s dill feta pasta salad is our latest compromise – a light orecchiette pasta dressed simply with olive oil, lemon, fresh dill and salty feta cheese. It delivers the heartiness of a pasta salad with the novelty of fresh summer flavors.

Dill Feta Pasta Salad Variations:

  • Add chopped cucumber for a crisp, cooling contrast to the richness of the feta.
  • Stir in halved cherry tomatoes to introduce a juicy pop of sweetness.
  • Use orzo pasta for a more delicate salad.
  • Swap lemon pepper for ranch, Italian of za’atar seasoning
  • Fold in flaked smoked salmon or shredded rotisserie chicken to turn it into a heartier main dish.
  • Add a drizzle of white balsamic vinegar for a hit of sweet acidity

Why should I not rinse my pasta after cooking? Keeping the pasta warm and un-rinsed helps it absorb the lemony dressing better as it clings to the leftover starch from cooking.

Can I use dried dill instead of fresh dill? Yes, while fresh dill provides the brightest flavor, dried works in a pinch. Use 2 teaspoons of dried dill if substituting.

How to store dill feta pasta salad: This pasta salad can be stored in an airtight container in the fridge for up to four days. I do not recommend freezing it.

How can I make this dish dairy-free? Swap the feta for a plant-based alternative or omit it entirely and add chopped olives for saltiness.

How to Make a Summer Pasta Salad with Dill Weed

Prepare pasta according to package directions.

Drain but do not rinse the pasta.

Place pasta in a large bowl and drizzle with olive oil and lemon juice. Toss to coat completely.

Sprinkle in lemon zest and dill, toss to distribute, then add lemon pepper seasoning and feta cheese. Taste and adjust, as desired.

Enjoy warm or refrigerate until cool.
