Ever since we first made our Watermelon Agua Fresca all those years ago, I’ve been hooked on making them every summer. They are the perfect refreshing and light summer drink to kick back and enjoy in the heat.

Healthy Cucumber Drink Recipe
Smoothies can be a bit much in the middle of a hot summer day, and lemonade gets boring after awhile – so for a perfectly refreshing mid-day drink, I looked for inspiration in countries that have this “beating the heat” thing down pat.
In Mexico, agua frescas are a mid-day staple: a sweet, frothy drink typically flavored with tamarind, hibiscus, and horchata. While I love hibiscus (as evidenced by my Hibiscus Iced Tea recipe here), I wanted something that would be overwhelmingly refreshing – like a spa day for my taste buds.
And these cucumber lime agua frescas with a hint of mint are just that! If you’ve ever had cucumber water at a fancy spa or hotel – this drink takes that concept and makes it 100x more refreshing. Plus, it’s a crowd-pleaser: even my picky daycare kids loved this recipe.
When making this recipe, ensure that the ice is super smooth and frothy – no big bits like a slushie or snow cone. An agua fresca is supposed to be drinkable and smooth.

Ingredients for Cucumber Lime Agua Fresca
- 2 cucumbers, peeled and chopped
- 1/2 cup fresh lime juice
- 1/2 cup sugar or honey, to taste
- Up to 2 cups water or ice, optional
- Small handful mint, optional
Tip: use whichever sweetener you feel most comfortable using, and start with 1/4 cup and adjust to your preferred level of sweetness.

How to Make Cucumber Mint Agua Fresca
Place all ingredients in a smoothie-style blender and puree until smooth.
Taste and adjust as needed.
Serve with a wedge or lime or sprig of mint.
Enjoy cold.

Ingredients
- 2 cucumbers, peeled and chopped
- 1/2 cup fresh lime juice
