Strawberry French Toast Roll-ups

Special enough for a Sunday brunch, yet easy enough to whip up on weekdays, these Strawberry French Toast Roll-ups are a sweet breakfast recipe that pack all of the flavors of strawberry-stuffed French toast into a compact, grab-and-go option perfect for on-the-go breakfasts or a lunch box treat.

Strawberry Cream Cheese French Toast Roll-ups Recipe
Today’s Strawberry French Toast Roll-Ups are a fun upgrade from French toast sticks, with juicy, sweet strawberries and tangy cream cheese baked right into the centre.
And just like French toast sticks, half of the fun of enjoying these French toast rolls is dipping them in a variety of sweet dips, like syrup, caramel sauce, chocolate or cream cheese frosting, etc.
(Alternatively you can drizzle syrup or caramel sauce over the roll-ups, or sprinkle with powdered sugar.)
It’s a decadent breakfast option for everything from brunches with friends to a casual Friday breakfast to celebrate getting through the week. It also makes a welcome lunch box treat – whether or not you include something sweet to dip them in.
French Toast Roll-up Variations:
- swap out the strawberries for another favorite breakfast fruit, like blueberries or pears
- swap out the cream cheese for a strawberry and Nutella French Toast Roll-ups
- for a prep-ahead version, use strawberry jam or strawberry cream cheese instead of fresh strawberries (you can even make PB&J French Toast Roll-ups)

How to store leftover French toast roll-ups: These strawberry French toast roll-ups can be stored in the fridge for 2-3 days.
While I do not recommend freezing the roll-ups if using fresh strawberries, if you use strawberry jam in place of the fresh strawberries, you can freeze in an airtight freezer container or zip-top freezer bags for up to 2 months.
Can I make these French Toast Roll-ups ahead of time? Yes, you can assemble the roll-ups (bread, cream cheese, and strawberries) and store them in an airtight container in the fridge for up to 12 hours before cooking. For longer storage, freeze them before dipping in the egg mixture—then just thaw slightly, dip, and cook as directed.
How do I prevent my French toast rolls from falling apart while frying? This can happen if the bread isn’t rolled flat enough or if too much filling is added. Roll the bread thin so it’s more flexible, and place strawberries in a single layer. Also, make sure the seam side of the roll is placed down in the pan first to “seal” it as it cooks.
How do I prevent French toast rolls from being soggy in the middle? Soggy centers usually mean the heat was too high, browning the outside before the inside fully cooked. Cook over medium heat, turning the roll-ups frequently, so they cook through evenly. You can also lightly press on them with a spatula while frying to help heat reach the center.

How to Make Strawberry French Toast Roll-ups
Use a rolling pin to roll bread slices flat, then cut off the crust.

Spread cream cheese over the bread, then place sliced strawberries on one end of the bread and roll up. (Starting with the end with the strawberries so that the strawberries end up in the center of the roll.)

Set a skillet or frying pan on medium heat as you finish up the prep for the French toast rolls.

In a shallow bowl, mix eggs, milk, cinnamon and vanilla extract until well combined.

Dip the French toast rolls in the egg mixture, coating completely and allowing any excess to drip back off into the bowl.

Melt the butter in the frying pan, and once hot add the French toast roll-ups and pan fry until golden brown on each side, about 3-4 minutes per side.
Serve with syrup, whipped cream, sliced strawberries and enjoy!

- 1 Carton Strawberries, washed & sliced
- 3 Eggs
