Last year, one of our most popular recipes for Thanksgiving was our Rice Krispie Turkey, so we had to follow it up with another fun no-bake Thanksgiving treat – Chocolate-Covered Strawberry Turkeys!

Chocolate-covered strawberries get a Thanksgiving make-over with these super cute and easy to make Chocolate-covered Strawberry Turkeys that look like mini roasted turkeys, right down to the vintage white paper frills at the bottom of the turkey legs.

Chocolate-covered strawberries get a Thanksgiving make-over with these super cute and easy to make Chocolate-covered Strawberry Turkeys that look like mini roasted turkeys, right down to the vintage white paper frills at the bottom of the turkey legs.

They are the perfect addition to your Thanksgiving dessert table, providing a fresh option alongside all of the classic offerings of pies and trifles that is perfect for picky eaters or those who want something small and light.

They can be enjoyed as-is, used to garnish cupcakes or add a cakepop stick for a hand-held treat without the mess.

Strawberry Turkey Variations:

  • Chocolate-Caramel Strawberry Turkeys: Dip the strawberries in hard-set caramel squares before dipping in chocolate.
  • Dark chocolate shell: Swap almond bark for tempered dark chocolate to offset the sweetness of the marshmallow and pretzel details.
  • Flavor infused white chocolate: Stir a few drops of a flavor oil (like maple or orange) into the melted vanilla bark to give the “frills” a gentle aromatic lift.
  • Mini turkey pops: Insert lollipop sticks before dipping to turn the strawberries into small, hand held treats for party platters.

Do I need to temper the chocolate or is almond bark enough? Almond bark is designed for melting and coating without tempering, so it gives a reliable firm shell with little fuss.

Why won’t the marshmallow and pretzel pieces stick to the berries? Moisture prevents adhesion. Make sure the strawberries are completely dry and allow each chocolate coated piece to set before continuing.

Can I make these ahead of time? Yes. They hold well for about 24 hours in the refrigerator. Condensation can soften the chocolate slightly, so keep them uncovered until fully set (before refrigerating).

How do I avoid chocolate pooling at the base of the strawberries? Allow excess chocolate to drip off before transferring to a parchment lined tray and lift the berry gently as it begins to firm.

Can I use fresh chocolate instead of almond bark? You can, but it will need tempering for a crisp finish. Almond bark is more stable for novice candy makers or humid kitchens.

Tip: don’t use any mushy strawberries as the moisture from them can cause the chocolate to slide. Firm berries with intact green tops create a better grip when dipping.

How to Make Chocolate-Covered Strawberry Turkeys

Prep your strawberries by washing and thoroughly drying them. (They cannot be wet at all for the chocolate to stick, so you may want to leave them out on paper towels for an hour or so.)

Melt your chocolate almond bark for 30 second increments, stirring well in between heatings until completely melted through.

Dip one side of a ½ marshmallow in chocolate, then place on the side of the turkey to resemble the thigh. Once dried, dip a ½ pretzel stick in chocolate, then insert into the marshmallow. Allow to completely dry and adhere to your strawberry. Do the same on the second half of the strawberry, to make both turkey legs.

Repeat with all remaining strawberries.

Dip your strawberry in the chocolate just up to the stem.

While your “turkeys” are drying completely, melt your vanilla bark in the microwave at 30 second increments, stirring in between reheatings.

Using a spoon, drop a small amount of the white chocolate on the end of the pretzel sticks to resemble “paper frills or “booties”.

Allow chocolate to set fully before serving or storing.

  • 1 lb strawberries (15 to 20 medium-sized strawberries in a pound)
  • 12 oz chocolate almond bark
  • 3 oz vanilla almond bark
  • 20 thin pretzel sticks (broken in half)
  • 20 mini marshmallows (cut in half)
