A fun 3-ingredient breakfast recipe kids will love making as much as they will enjoy eating them, these Chocolate Chip Muffin Mix Pancakes are a fun way to enjoy “homemade” pancakes in a variety of different muffin-inspired flavors.

By just adding a 1/2 cup of milk and an egg to a package of muffin mix, we were able to quickly whip up a batch of tender, light Chocolate Chip Muffin Mix Pancakes with plenty of chocolate chips throughout and slightly crispy edges. This is the ultimate breakfast hack for lazy mornings and a great recipe for kids to make independently.

Chocolate Chip Muffin Mix Panakes Recipe

While I think my homemade pancakes recipe is one of the best out there (especially when doctored up with yummy toppings, like our Disneyland Apple Cinnamon Pancakes), I’m also a huge fan of trying out little kitchen hacks (like using cake mix to make waffles) – and this muffin mix pancake hack was a lot of fun to make with my daughter.

By just adding a 1/2 cup of milk and an egg to a package of muffin mix, we were able to quickly whip up a batch of tender, light pancakes with plenty of chocolate chips throughout and slightly crispy edges.

Plus, it was the perfect amount of pancakes (8-10 small-ish pancakes or 5-6 normal pancakes) for us – or, if you have a bigger family, it’s an easy way to make a few different flavours all at once.

While you can often find different flavors of pancake mix, there are soooo many more options when it comes to muffin mix – lemon poppyseed, triple berry, banana nut, double chocolate, cinnamon sugar, etc etc.

We tried out this method of making muffin mix pancakes with a few different brands: Betty Crocker, Martha White, Jiffy and Quaker. To use the same increments as us, you want a 6-8oz package of muffin mix. (If you need to use a bigger container, increase the milk and egg to balance it out, or measure out 6-8oz using a digital scale.)

Muffin Mix Pancake Tips:

  • I think one of the best things about using muffin mix to make pancakes is that you can buy the “type” of pancake that you want, with the mix-ins already there, by purchasing blueberry muffin mix, chocolate chip muffin mix, lemon poppyseed muffin mix, etc – if there is a muffin mix flavor available you can make pancakes with it!
  • However, you can add in additional mix-ins like vanilla extract, cocoa powder, nuts, cinnamon, sprinkles, etc.
  • To bump up the protein, you can use a protein-rich milk (like Fairlife) or add in a scoop of protein powder to the mix.
  • For thinner crepe-like pancakes, skip the eggs.
  • Avoid the urge to press down on the pancakes with your spatula (like you would with a burger) – this will prevent them from getting fluffy.

Do muffin mix pancakes taste like regular pancakes? Muffin mix pancakes aren’t as light and fluffy as from-scratch pancakes and they are slightly sweeter and richer, and the edges get a little crispy/caramelized from the additional sugar.

How to store leftover muffin mix pancakes: leftover pancakes can be stored in an airtight container in the fridge for 4-5 days.

Can I freeze leftover muffin mix pancakes? Yes! These pancakes can be stored in an airtight ziptop freezer bag or your favorite freezer containers and frozen for up to a month. (This set of freezer containers is a crazy bargain.) You may want to separate the individual pancakes with squares of parchment paper to prevent them from sticking together.

How to Make Chocolate Chip Muffin Mix Pancakes

In a medium-sized bowl, whisk together the muffin mix, milk and egg until well-combined.

Allow the mixture to sit for 5 minutes before proceeding with the recipe.

Place a skillet over medium-heat and once hot, add a bit of butter or baking spray.

Once the butter is melted and hot, add 1/4 cup of the pancake batter.

Allow the pancake to cook for about 2 minutes, until bubbles appear all over the top. Flip and cook until golden brown on the bottom, approximately 2 minutes.

Remove the pancake to a plate and repeat with remaining batter.
