Pumpkin Hot Chocolate Recipe
Ella just adores anything made with pumpkin. She’s the reason I have about eleventy-billion pumpkin recipes on this site, and always have a couple cans of pumpkin in the pantry.
Our night time ritual in the colder months is to sit down in the living room with a couple mugs of a warm beverage and then read together for awhile before starting the rest of our bedtime routine. We’ve found some delicious herbal teas that we both like, and we also love a warm cup of apple cider, but some nights warrant a creamy mug of hot chocolate.
For a fun twist, I thought I’d experiment with swapping out the chocolate in our hot chocolates for some cinnamon chips and a spoonful of pumpkin puree – and it turned out wonderfully!
Of course, you could still leave the chocolate in this recipe, as pumpkin and chocolate go deliciously together (as evidenced by my Magical Pumpkin Cake), but this recipe would also be perfect for that weird family member who doesn’t like chocolate.
You could also add an espresso shot or a shot of rum or vodka for a grown-up take on this hot chocolate, but we kept things strictly PG over here.
The result was a creamy, decadent “hot chocolate” with a subtle pumpkin taste and a sweet cinnamon earthiness. Miss G drank two cups before I had to cut her off (we were getting close to bedtime). There’s also no added sugar beyond what’s in the cinnamon chips, so if you wanted to use a sugar-free cinnamon chip, you could keep this recipe completely sugar-free.
