These Cherry-stuffed Chocolate Cake Mix Cookies are rich, almost brownie-like cookies, with crispy, exteriors and chewy, tender interiors with a sweet and juicy maraschino cherry surprise nestled in the middle.
I like the crunch of the red sugar crystals on top and how they kind of evoke the color of the cherry centre, but you can leave it off or roll the cookie dough in powdered sugar before baking.

How to Make Cherry Chocolate Cake Mix Cookies
Preheat oven to 350F
Line two baking sheets with parchment paper or silicone baking mats.
Combine the chocolate cake mix, eggs and oil together until completely combined.
Portion the dough into 1-Tablespoon sized scoops.
Flatten each scoop and place a cherry in the centre. Wrap the cookie dough around the cherry so that it is completely enclosed.
Place the sugar crystals in a small bowl and dip the cookie ball into the sugar crystals.
Place the cookie ball sugar-side up on the prepared baking mats.
Bake for 8-10 minutes.

- 20 Cherries (can cut up or leave whole)
- 1/4 cup red sugar crystals, optional
Instructions
