Cake mix cookies are an awesome solution when you’re pressed for time, or baking with little ones, for a variety of reasons:

  • they only require a few ingredients
  • they take less than 10 minutes to whip up
  • depending on the ingredients you add, you can make a thick and cake-y cookie, or a crunchy, chewy cookie (check out this cherry cake mix cookie for a thicker cookie version)
  • and they turn out incredibly delicious – maybe even better than some from-scratch cookies!

I like the crunch of the red sugar crystals on top and how they kind of evoke the color of the cherry centre, but you can leave it off or roll the cookie dough in powdered sugar before baking.

Cherry Chocolate Cake Mix Cookies Tips

You can alter this recipe to make a variety of different cookie flavors:

  • use cherry cordials instead of just plain maraschino cherries for an even more decadent cookie
  • swap in Thin Reese’s Cups and peanut butter chips to make a Peanut Butter Chocolate Cookie
  • swap in caramel-stuffed chocolate squares and caramel baking bits for a Chocolate Caramel Cookie
  • stuff with a peppermint pattie like we did in our Peppermint-stuffed Cake Mix Cookies
  • swap out the sugar crystals for sprinkles that match a special occasion or party theme
  • add a chocolate drizzle to the top of the cooled cookies with some melted chocolate chips

How to store these chocolate cherry cake mix cookies: these cherry-stuffed cookies can be stored in an airtight container at room temperature for up to a week, although they will be freshest within the first 4 days after baking.

Can these cherry chocolate cake mix cookies be frozen? Yes! Allow them to cool completely, then use small parchment squares to prevent them from sticking together when you store them in ziptop freezer bags or your favorite freezer containers. (This set of freezer containers is a crazy bargain.)
