Flavorful, summery Bruschetta Chicken is a naturally low-carb recipe the whole family will love. Marinated chicken breasts are grilled, baked or pan-cooked before being topped with a fresh bruschetta mixture.

Bruschetta Chicken Recipe

Bruschetta is one of our family’s favorite appetizers so it seemed like a no-brainer to incorporate bruschetta’s vibrant summery flavours into a hearty and filling main dish.

By simply swapping out the toasted baguette that traditionally serves as the base for a bruschetta with a flavorful, marinated chicken, you get a naturally low-carb meal that is filling and protein-rich while tasting light and fresh.

To make this bruschetta chicken recipe, I marinate the chicken the night before and then about 20 minutes before dinnertime, I quickly whip up the bruschetta topping while heating up the olive oil in a cast-iron skillet to cook the chicken.

The bruschetta’s flavors will mingle and intensify as the chicken cooks, so once the chicken has reached an internal temperature of 165F, you can immediately top it with the bruschetta mixture and it will be absolute perfection.

Pair it with a simple summer side dish for a quick and easy family dinner that tastes like it was prepared in a restaurant kitchen.

Bruschetta Chicken Variations:

  • swap out the chicken for steak or fish
  • grill or bake the chicken instead of pan-searing
  • top with freshly grated Parmesan cheese to give a salty-umami hit of flavor
  • swap out the balsamic marinade for red wine or red wine vinegar, or just stick to a more simple olive oil and garlic marinade
  • add additional veggies to your bruschetta mixture, as desired (chopped asparagus, bell peppers, cucumbers, zucchini, etc)

Can Bruschetta Chicken be frozen? The chicken can be frozen in the marinade or after cooking, but the bruschetta topping should be prepared fresh within a couple hours of serving. (It can be made up to one day before but I personally dislike the texture of refrigerated tomatoes.)

To freeze the chicken, store in an airtight ziptop bag or your favorite freezer containers for up to three months. (This set of freezer containers is a crazy bargain.)

How to Make Bruschetta Chicken

Pat chicken breasts dry and place in a container with a lid.

Pour in 3 Tablespoons of olive oil, all of the balsamic vinegar and 1 teaspoon of the minced garlic. You can also add Greek seasoning, if desired.

Cover and refrigerate overnight.

Allow chicken to sit out for about 10 minutes before proceeding with cooking.

Place 2 Tablespoons of olive oil in a skillet over medium heat.

Add the chicken breasts to the skillet and cook through, about 8 minutes per side, until an inserted thermometer reads 165F.

While the chicken is cooking, prepare your bruschetta topping.

In a medium-sized bowl, combine the tomato, onion, basil, salt, lemon juice and remaining garlic and olive oil. Stir to combine, then taste and adjust, as desired.

When the chicken is done cooking, remove from the skillet to your serving plate and divide the bruschetta mixture overtop.

Ingredients

  • 4 Chicken Breasts
  • 6 Tablespoons Olive Oil
  • 3 Tablespoons Balsamic Vinegar
  • 1 Tomato, chopped (approximately 1/2 cup)
  • 2-3 teaspoons Minced Garlic
  • 1/4 cup Red Onion, minced (or more to taste)
  • 1/4 cup Basil, shredded
  • 1/2 teaspoon Salt
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon Greek Seasoning, optional
