Chicken Quesadillas Recipe

Every Sunday, I meal prep a few basics to keep our week running smoothly and ensure that we have some healthy, grab-and-go options when we are pressed for time.

I always make a big batch of soup (my roasted red pepper soup is a personal favorite), sugar-free banana bread, hard-boiled eggs (for topping salads or turning into a quick egg salad) and a couple seasoned chicken breasts.

Having some pre-cooked chicken on hand at all times makes it easy to whip up quick lunches or suppers on those days that are jam-packed with extra-curriculars and errands and there are so many delicious ways to use it up. Needless to say, one of my family’s favorites is chicken quesadillas.

What is a chicken quesadilla? A chicken quesadilla is a Mexican dish consisting of a tortilla that has been stuffed with cheese, chicken and other toppings. Quesadilla is Spanish for “little cheesy thing” and there are many variations on this popular recipe.

These chicken quesadillas come together in less than 10 minutes and pair perfectly with a side salad or bowl of soup. The crispy tortilla is stuffed with melted cheese, hearty seasoned chicken and crisp-tender veggies for a filling and completely satisfying meal the whole family will love.

Chicken quesadillas are also a great meal prep option or a filling lunch box option for kids.

Variations on a Chicken Quesadilla

  • use buffalo chicken for a flavorful buffalo chicken quesadilla
  • swap out the veggies listed here for your personal favorites
  • use flavored tortillas, like spinach or sundried-tomato – you can also use low-carb tortillas, if desired
  • add ranch seasoning to the chicken and crumble in some bacon for a bacon ranch chicken quesadilla
  • swap out the seasonings or add BBQ sauce or salsa while cooking your chicken
  • dip your tortillas in hot sauce or enchilada sauce before frying to amp up the flavor

How to season chicken for quesadillas: personally, I like seasoning chicken for quesadillas with taco seasoning, but if you’re cooking with pre-cooked chicken, you can simply add a sprinkle of taco seasoning or chipotle sauce to the quesadilla before folding it up.

Are chicken quesadillas healthy? This really depends on what you add to the quesadilla and what your personal health goals are. It’s a great way to get extra protein and veggies into your day, and you can use less cheese or low-carb/high-protein tortillas if that suits your health priorities better.

How to Make Chicken Quesadillas

Place the flour tortillas on a cutting board or clean surface and sprinkle the cheese overtop, going right to the edges.

Divide the chicken between the two tortillas, making an even layer on one side of the tortilla. If the chicken is unseasoned, sprinkle with taco seasoning.

One the opposite side of the tortilla, sprinkle the vegetables in an even layer – dividing equally among the two tortillas.

Fold the tortillas, chicken side over the vegetable side for ease.

Place the oil or butter in a large skillet over medium heat.

Place the folded tortillas in the oil and cook for 2 minutes per side, until lightly golden and the cheese is completely melted.

Ingredients

  • 2 Large Flour Tortillas
  • 1 cup Shredded Cheese, of choice
  • 4 oz Chicken, sliced or shredded
  • 1 teaspoon Taco Seasoning (if chicken isn't already seasoned)
  • 1 Tomato, diced
  • 1/4 cup Red Onion, diced
  • 1/2 Bell Pepper, diced
  • 1 Green Onion, Diced
  • 2 Tablespoons Oil or Butter

Instructions
