Ella loves pumpkin spice in everything. We’ve made everything from pumpkin spice play dough to pumpkin spice scones, and she still wants more! She recently came up with the fun idea of making pumpkin spice rice krispie treats, and they turned out perfectly!

Pumpkin Spice Rice Krispie Treats Recipe

For the uninitiated, pumpkin spice is a blend of cinnamon, nutmeg, allspice, cloves, and powdered ginger. It has a rich, warm smell and a pleasant sweet-earthy flavour. You actually don’t need to add it to pumpkin to still call it pumpkin spice, but the pumpkin does give foods a fun orange colour that is perfect for fall treats!

(Often, you add so little pumpkin to “pumpkin spiced” treats that you can barely taste the pumpkin – so it’s really personal choice if you want to add it. Ella insists on adding a can of pumpkin to our grocery cart every time we hit the grocery store once the weather starts to turn even the slightest bit cool.)

This pumpkin spice rice krispie treats recipe is super easy, and just requires the use of a microwave for 30-45 seconds for melting the marshmallows, making it a safe recipe for kids in the kitchen.

We made a cream cheese glaze (similar to the one in our cinnamon bun pancakes) for the topping, but you could alternatively use a bit of melted pumpkin spice candy melts, or just leave them plain. An extra sprinkle of pumpkin spice is always nice.

Pumpkin Spice Rice Krispie Squares Ingredients

  • 4 cups marshmallows
  • 6 cups puffed rice cereal, any brand
  • 1 Tablespoon butter or coconut oil
  • 2 Tablespoons pumpkin puree
  • 2 teaspoons pumpkin spice – check out our homemade pumpkin spice recipe here

Optional Cream Cheese Glaze:

  • 2 Tablespoons butter, room temperature
  • 1 Tablespoon cream cheese, room temperature
  • 1/4 cup powdered icing sugar
  • 1/2 teaspoon vanilla extract
  • Milk, optionally, to thin out

Tip: if you don’t want to use pumpkin puree, you may want to just increase the butter by a tablespoon.

Kitchen Tools You May Need:

  • Measuring cups and spoons
  • Microwave-safe bowl
  • Casserole dish

How to Make Pumpkin Spice Rice Krispie Treats

Melt the marshmallows and butter over the stove or in the microwave in 30 second bursts.

Stir well in between heats to prevent scorching.

Once the marshmallows are melted and well stirred, add in the pumpkin puree and pumpkin spice, and then gently stir in the rice cereal, coating completely but being careful not to crush the cereal.

Spoon the mixture into a lined or buttered baking pan, and refrigerate 2 hours or overnight.

Just before serving, mix your cream cheese glaze together. You can drizzle this onto your pumpkin spice rice krispie treats with a spoon or a piping bag if you want more precision.

Optional: Sprinkle with extra pumpkin spice or cinnamon.
