Twice Baked Potato Casserole Recipe
Twice Baked Potatoes are one of my favourite side dishes – they are a must-have with a perfect medium-rare steak; crispy potato skin filled with creamy mashed potatoes loaded with butter, sour cream, cheddar cheese, bacon and green onions.
However, as decadent and delicious as twice baked potatoes are, they can be a bit time-consuming – especially if you’re cooking for a crowd or trying to make them as a side dish on a busy night.
Taking all of the flavours and textures of this family favourite and turning it into a time-saving casserole is a game-changer. Now you can have all of the flavour of a steakhouse-worth twice baked potato with a fraction of the time and effort.
A creamy, cheesy and comforting casserole that pairs wonderfully with a variety of meals.
Twice Baked Potato Casserole Variations:
- add steamed veggies, such as broccoli, peas, bell peppers, etc.
- swap out the cheese for your preference
- add hot sauce or taco seasoning for some spicy flavor
- for a low-carb version, use roasted cauliflower or radishes in place of the potatoes
- use Greek yogurt in place of the sour cream, or swap in half cottage cheese for half of the sour cream for extra protein
- or, add some cooked meat for additional protein – seasoned, ground meat (beef, chicken, pork or turkey) would be my preference
Can Loaded Potato Casserole be made in advance? You can prepare this potato casserole 2 days ahead of time. Follow the directions up to baking stage (step 9) and then cover and refrigerate until ready to bake.
How to store leftovers: Leftover potato casserole can be stored in the refrigerator for up to 3-4 days.
Loaded Potato Casserole can be made in the crockpot – prepare up to step 9 then instead of placing in a casserole dish, assemble in the crockpot and cook on high for 1 hour or low for 2 hours.
What is the difference between a baked potato and a twice-baked potato? A baked potato is a full potato that has just been baked once and while it is fluffy, it doesn’t have that creamy texture of a twice baked potato. Twice baked potatoes have the potato flesh scooped out and mixed with sour cream, butter and sometimes milk, before being placed back in the potato skin for a second bake which creates a crispy shell with a creamy mashed potato interior. They are quite literally twice-baked.
What is the best potato for twice-baked potato casserole? Russet potatoes are my go-to as they are starchy and fluffy while the skins are very nicely crisp and sturdy.
Can you freeze twice-baked potato casserole? Yes, you can! Prepare the casserole right up to step 9 before it needs to be cooked, then wrap or cover and freeze.
Freeze for up to 2 months, thaw completely overnight before baking as directed below.

- Sour Cream
- Butter
- Milk
- Salt and Pepper, to taste

- Chopped, Cooked Bacon (approximately 4 slices)
- Green Onions, green parts chopped

How to Make Twice Baked Potato Casserole
Preheat oven to 400F.
Line a baking sheet with tinfoil or a silicone baking mat
Scrub each potato clean and then rub with cooking oil.
Place the potatoes on the lined cookie sheet and bake for 1 hour.
Chop the potatoes into 1″ pieces and place in a large bowl.
Add the butter, sour cream, milk, salt and pepper, half of the cheese and half of the chopped bacon to the mixing bowl.
Reduce oven temperature to 350F.
Scoop potato mixture into an 8″ x 8″ casserole dish.
Top with remaining cheese, bacon and green onions.
Bake for 10-12 minutes, until cheese is completely melted.
