To celebrate the release of Disney’s new live action remake of Dumbo, today I’m sharing a fun and easy Dumbo Cake Mix Sugar Cookie recipe – it would be great alongside our popular Dumbo Cupcakes for a family movie night or circus-themed party.

Cake Mix Sugar Cookies Recipe

Dumbo was one of my favorite Disney movies as a child.

We didn’t have English-speaking television when we were stationed in China, so the only “tv time” we would get was Disney movies or VHS recordings of kids’ television shows like Today’s Special and the Smoggies. I think we wore out every single movie by playing them hundreds of times.

I don’t know what it was about the original Dumbo that I loved so much – the music, the message, or that cute little elephant – but once Disney announced they would be doing a live action remake, I was soooo excited to check it out.

   

From Disney and visionary director Tim Burton, the all-new grand live-action adventure DUMBO expands on the beloved classic story where differences are celebrated, family is cherished and dreams take flight.

Circus owner Max Medici (Danny DeVito) enlists former star Holt Farrier (Colin Farrell) and his children Milly and Joe to care for a newborn elephant whose oversized ears make him a laughingstock in an already struggling circus. But when they discover that Dumbo can fly, the circus makes an incredible comeback, attracting persuasive entrepreneur V.A. Vandevere (Michael Keaton), who recruits the peculiar pachyderm for his newest, larger-than-life entertainment venture, Dreamland.

Dumbo soars to new heights alongside a charming and spectacular aerial artist, Colette Marchant (Eva Green), until Holt learns that beneath its shiny veneer, Dreamland is full of dark secrets.

Sounds freaking amazing, right?

The movie opens in theatres everywhere March 29th, 2019- so until then, you’ll have to bide your time with the original and a plate full of these cake mix sugar cookies!

I’ve shared a few versions of cake mix sugar cookies on the blog before. They are a super simple way to make fluffy, dense cookies and you can mix just about anything in to them to make a fun filling or flavor.

Today, we’re focusing on circus colors inspired by Dumbo, but you can place a chocolate square or cherry in the center of the cookie for a hidden surprise!

Cake Mix Sugar Cookies Ingredients

  • 1 box of White cake mix
  • 1/3 cup vegetable oil
  • 2 large eggs
  • Red, Golden Yellow, Blue gel food coloring
  • 1 container of white sanding sugar

Tip: you can add cherries or a chocolate square or a marshmallow to the center of each cookie for a special surprise, if desired.

Kitchen Tools You May Find Helpful

  • Electric mixer
  • Measuring cups and spoons
  • Mixing bowl
  • Small bowls
  • Cookie sheet
  • Slipmat

How to Make Cake Mix Sugar Cookies

Preheat oven at 350º F.

Using a standing mixer, combine cake mix, vegetable oil, and 2 eggs until combined.

   

Divide the batter into three separate bowls.

Mix Golden Yellow food coloring into one bowl.

Mix Red food coloring into the second bowl.

Mix Blue food coloring into the third.

Pour the sanding sugar into a bowl

Take about 1 teaspoon of each color of dough and form into tablespoon sized balls.

Roll cookie dough into the sanding sugar

Place cookie dough balls about 2 inches apart on a parchment paper lined baking sheet.

Lightly push each cookie dough ball down so that it becomes a thick but flat disk.

Bake for 7 to 8 minutes, until cooked through and slightly browned on the edges.

Allow cookies to completely cool before enjoying!
