Roasted Smashed Greek Potatoes have a wonderful blend of crunch and soft, creamy fluffy texture with the perfect balance of herby and salty toppings. They are a great potato side dish for a variety of meals and add big Greek flavor to even the mildest of mains.

Crispy Smashed Greek Potatoes Recipe

I’m super excited to share today’s smashed potato recipe with you for more than just their amazing flavor – but because this recipe was 100% created and photographed by my 7 year old daughter.

I’ve had her cooking in the kitchen with me since she was 18 months old and it’s a real passion of mine to share recipes that kids can make so that our kids have not only kitchen skills but real kitchen confidence.

It might take away a bit of the magic of these photos but in being real about one aspect of life, I have to pull away the curtain on another aspect. Yes, we shoot our recipes with professional lights and on vinyl backdrops sometimes – but also yes, a 7 year old made this and shot the photos to boot!

I’ll be honest – sometimes encouraging our kids to cook results in a real mess of the kitchen, a waste of kitchen ingredients and sometimes a bandage or two. But as with everything in parenting, we’re playing the long game. I’ve eaten my fair share of weird soup concoctions and swept up plenty of crunchy shredded cheese off the floor – but that’s all part of the journey of fostering kitchen skills and confidence with little chefs.

This recipe being easy enough for kids to make aside, I want to reassure you that today’s recipe for Greek smashed potatoes has amazing flavor and texture. The potatoes are have that wonderful blend of crunch and soft, creamy fluffy texture with the perfect balance of herby and salty toppings. They are a great potato side dish for a variety of meals and add big Greek flavor to even the mildest of mains.

Let your kids take care of this side dish as you take care of the main dish – or, if you’re looking for an easy side dish, it doesn’t get easier than one a 7 year old made!

Smashed Greek Potato Variations:

  • Add fresh lemon zest over the finished potatoes for a burst of brightness.
  • Chop and scatter a few olives alongside the feta for a briny punch.
  • Sauté a clove of garlic in the olive oil before drizzling for added depth (or use a garlic-infused olive oil)
  • Swap the parsley for fresh dill or mint to complement the Greek flavors.

  • Or, change up the flavors entirely to make a taco-smashed potato or Italian-smashed potato (with Parmesan and Italian seasoning to complement an Italian main dish)

Do I need to peel the potatoes first? No, red potatoes have thin skins that become wonderfully crispy when roasted.

Can I use another type of potato? Small Yukon Golds work well, but avoid starchy varieties like Russets which can fall apart.

Can I make these ahead of time? Yes, boil and smash the potatoes earlier in the day, then roast and proceed with the rest of the recipe just before ready to serve.

How do I get them extra crispy? Be sure the potatoes are dry before roasting and don’t overcrowd the pan.

Tip: you can use lemon pepper seasoning instead of greek seasoning.

How to Make Crispy Greek Smashed Potatoes

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Boil the potatoes in salted water for about 15–20 minutes, or until fork-tender. Drain and let cool slightly.

Place potatoes on the baking sheet and gently press each one flat using the bottom of a glass or measuring cup.

Drizzle with olive oil, sprinkle with Greek seasoning, and scatter thyme sprigs across the pan.

Roast for 25–30 minutes, or until the edges are golden and crispy.

Top with crumbled feta and chopped parsley before serving. Serve warm.
