We’ve been renovating our house this past year, so easy suppers have been a necessity.

Not only are we often exhausted by the time supper comes around, but there just never seems to be enough time in the day with all of the little surprises that pop up – or tasks that take 502x longer than they are supposed to.

Naturally, I’ve become obsessed with my instant pot and crockpots… yes I said crockpotS – I have three.

I cannot describe how wonderful it is to know that no matter what else the day throws at you, a healthy, hearty supper is already taken care of.

Psst – how inviting does that bowl of yumminess look with the little wisp of steam coming off of it?

Typically, I prepare supper while the kids are eating lunch – or if that’s a bit crazy, during nap time.

If there are “steps” (like shredding the chicken in this recipe) I set my timer so I don’t have to worry about losing track of time, and it’s okay if I don’t do the step right on time – crockpot meals are pretty forgiving.

This crockpot chicken parmesan pasta takes about 5 minutes to get everything prepped and put in the crockpot, then about 5 minutes shredding the chicken after two hours, and maybe 30 seconds of adding some cheese towards the end of the cooking time (you can add it just before serving but then you miss out on the ooey gooey melted cheese).

For those 10 minutes of effort, you will be rewarded with a delicious and hearty meal full of vegetables, protein and flavor that the whole family will love.

Ingredients for Crockpot Chicken Parmesan Pasta

  • 1-16oz can tomatoes in juice
  • 1-14oz can tomato sauce
  • 5 chicken thighs
  • Salt and pepper, to taste
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 2 teaspoons granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1 teaspoon red chile flakes
  • 1 lb pasta of choice (we used shells)
  • 2 cups marble cheese, grated
  • 1 cup Parmesan cheese, grated or shaved
  • Handful parsley, chopped for garnish
  • 2 teaspoons hot sauce, optional

Tip: Replace the herbs and spices mentioned with 3 teaspoons of Italian seasoning if desired. Add in additional vegetables as desired.

Tip #2: you can use minced garlic in place of the granulated.

Kitchen Tools You May Find Helpful

  • Slow cooker
  • Crockpot Liners <– I haven’t used these but I have several friends who SWEAR by these for easy clean up
  • Measuring cups and spoons
  • Cheese grater
  • Meat thermometer

This is the crockpot that I use the most often – it has a thermoshield which not only prevents little fingers from being burned if the kids touch the outside of the crockpot, but it’s also great for bringing along to potlucks. I also like that I can set the cook time on it, so if we end up taking too long playing outside (or running errands) I don’t have to worry about the food burning.

How to Make Crockpot Chicken Parmesan

Season your chicken thighs with salt and pepper.

Place tomatoes, tomato sauce, herbs and season chicken in the crockpot.

Cook on high for 2 hours – or low for 4 hours.

At that time, remove the chicken and shred with two forks – this serves two purposes. You are checking to see how cooked the chicken is and also making it smaller for serving.

Add the chicken back into the crockpot along with the uncooked pasta.

Cook on low for 1 hour (or high for about 20 minutes).

Add the cheese and cover for 10-15 more minutes before serving.
