Rainbow Fruit Chocolate Pie
A delicious pie recipe kids can make, today’s Rainbow Pie is a fun twist on a Jello Chocolate Pudding Pie with a buttery, flakey pie crust and a colorful rainbow fruit topping. It’s a perfect easy dessert for St Patrick’s Day or any occasion that calls for a rainbow treat!
Easy Chocolate Pudding Pie Recipe
When I suggested to my daughter that we make a Jell-O Chocolate Pudding Pie she was soooo excited… but when I started explaining the chocolate graham cracker crust she protested!
Graham cracker crust is for cheesecakes, apparently, and pies require, well, pie crusts.
It’s a departure from the original but it actually really works!
The buttery, flakey pie crust pairs perfectly with the rich chocolate pudding and the the medley of tart and sweet rainbow fruits decorating the top.
It just goes to show you that sometimes following your kids’ crazy kitchen ideas can actually turn out pretty good.

If you don’t plan to enjoy this pie on the same day that you make it, wait to add to the cut fruit topping as it will wilt if left for more than a few hours in the fridge.

How to Make Chocolate Pudding Pie
Prepare your pie crust according to package directions.
After pricking the pie crust all over with a fork, brush with melted butter before baking.
As the pie crust cools, prepare the instant chocolate pudding according to package directions.
Pour the chocolate pudding into the cooled pie crust and smooth down with a spatula or the back of a spoon.
Prepare and cut your fruit into slices.
Arrange the fruit on top of the pudding, as desired.
Cover the pie with plastic wrap or beeswax wrap, and place in the fridge and chill until ready to serve.

- 1/4 cup Butter, melted
- 3.4oz Instant Chocolate Pudding Mix
- 2 cups Milk
- 1/4 cup Strawberries
- 1/4 cup Mandarins
- 1/4 cup Pineapple
- 1/4 cup Kiwi
- 1/4 cup Blueberries
- 1/4 cup Purple Grapes
Instructions
- Prepare your pie crust according to package directions.

Swap out the fruits suggested above for your personal favorites in the same color family.
