Pizza Pasta Salad Recipe

There aren’t many good uses for leftover spaghetti… but let’s be honest. There’s always leftover spaghetti.

We’ve tried so many things with our spaghetti – painting with it, using it for baked spaghetti, adding it to a casserole – but I think my favorite recipe for leftover spaghetti has to be this pizza pasta salad recipe!

It works with just about any leftover pasta – although, for some reason, I always make the perfect amount when it comes to other pastas – it’s just spaghetti that I overmeasure.

I keep things simple with a store-bought sun-dried tomato pesto, but if you want to make your own from scratch this looks like a good recipe.

If your pesto is coating the pasta too thick, add a generous glug of extra virgin olive oil to loosen things up.

This salad is perfect for taking on a picnic or prepping ahead for an easy weeknight side dish. If your family usually does pizza nights, this is a fun twist that is way easier on the budget than take-out pizza. (And is arguably just as tasty!)

If your kids disagree on pizza toppings, you could even set out a couple bowls of toppings for them to mix into their pasta salad for a customized salad. Personally – I just use making this salad as an excuse to use up all of the “last of” ingredients hanging out in the fridge!
