Today’s No Bake Cherry Cheesecake recipe uses a few everyday ingredients to create a deliciously easy no-bake treat that is tasty enough to serve for special occasions (but quick enough for a weeknight dessert). It’s arguably better than a baked cheesecake and a perfect no bake dessert for everything from BBQs to birthdays.

No Bake Cherry Cheesecake is a layered dessert consisting of a crunchy, sweet graham cracker crust, a light, creamy and tangy cheesecake filling and topped with juicy, sweet-tart cherry pie filling. The sweet acidity of the cherry pie filling cuts through the rich tartness of the cheesecake layer and is balanced out by the crunchy texture and sweetness of the graham cracker base.

No Bake Cherry Cheesecake is a layered dessert consisting of a crunchy, sweet graham cracker crust, a light, creamy and tangy cheesecake filling and topped with juicy, sweet-tart cherry pie filling. The sweet acidity of the cherry pie filling cuts through the rich tartness of the cheesecake layer and is balanced out by the crunchy texture and sweetness of the graham cracker base.

We enjoy this No Bake Cherry Cheesecake all year round (it’s my step-father’s favourite dessert to make for special occasions) but it’s especially great in the summer when you want a delicious dessert but can’t bear the thought of turning on the oven.

It’s also great for special occasions when the oven will be in high demand for cooking other dishes, and the common ingredients and quick prep time also make it a great last-minute dessert.

It’s an easy recipe to make with young kids, while preteens and teens can successfully make it themselves to build up their kitchen skills and confidence.

No Bake Cherry Cheesecake Variations:

  • Use OREO crumbs or chocolate graham cracker crumbs for the crust instead of graham cracker crumbs
  • Or for a salty twist, use crushed Ritz crackers for the crust
  • You can skip the sugar in the graham cracker crust, if desired
  • Use strawberry pie fillinging, blueberry pie filling, boxed lemon pie filling or apple pie filling in place of the cherry pie filling
  • Or skip the filling and top with fresh berries
  • Can use a homemade pie filling, but keep in mind that the filling will need to be pre-cooked
  • Our Copycat Cracker Barrel Fried Apples or Monkey Butter Pineapple Ice Cream Topping would also make delicious toppings for a no-bake cheesecake

How to store cherry cheesecake: store, covered, in the fridge for up to 5 days.

How to freeze cherry cheesecake: This no bake cherry cheesecake can be frozen up to 3 months – wrap with plastic wrap or aluminum foil before storing in a ziptop freezer bag or your favourite freezer containers. (This set of freezer containers is a crazy bargain.)

Can I use something other than Cool Whip in this recipe? Yes, you can use heavy whipping cream instead of Cool Whip. Whip for 4-5 minutes until light and fluffy before incorporating in the recipe.

Tip: swap out the cherry pie filling for a different variety of fruit pie filling for a fresh new take on this recipe.

  • Measuring Cups and Spoons
  • Mixing Bowl
  • Wooden Spoon or Spatula <– I like these spatulas because they are one solid piece and don’t have removable heads for bacteria to get trapped underneath. Plus they are heat-resistant and have a lifetime warranty.
  • Electric mixer <– this is a great hand mixer if you don’t want to make the investment into a stand mixer
  • Casserole Dish

How to Make No Bake Cherry Cheesecake

Grease and line a 8″ x 8″ casserole dish and set aside.

In a medium bowl, combine the graham cracker crumbs, melted butter and sugar.

Press the graham cracker mixture into the casserole dish into an even layer.

Refrigerate for 1 hour. (I like to remove the cream cheese at this time to give it a chance to soften.)

In a medium-sized bowl, combine the whipped topping, cream cheese and powdered icing sugar. Whip until no lumps remain.

Fold the mixture out over the graham cracker layer and use the back of a spoon or an offset spatula to smooth down completely.

Pour the cherry pie filling overtop.

Refrigerate until ready to serve.

  • 1/2 cup melted butter
  • 1/3 cup sugar
  • 1-8 oz package cream cheese, softened
  • 2 cups whipped cream (or Cool Whip)
  • 1 cup powdered icing sugar
  • 1-18 oz can cherry pie filling

Instructions

  • Grease and line a 8" x 8" casserole dish and set aside.
