Orange Creamsicle Cheesecake Bars Recipe
I’m going to be honest with you right off the bat: I am NOT a creamsicle fan.
Never ever. Nope. Nada.
But, because my daughter is committed to being my opposite in all things sweets, wouldn’t you know that my daughter would order a creamsicle at the beach and fall in love?
But, because I am a good mama and nothing but self-sacrificing, I made her and her buddies a batch of theses Orange Creamsicle Cheesecake Bars for a recent slumber party.
These would be an awesome summer dessert for a BBQ – way less messy than creamsicles and just slightly more sophisticated.
I love how simple they are to dress up – just a dollop of whipped cream and a slice of orange (maybe a sprig of mint) and you’re golden!
Orange Cheesecake Ingredients
For the cheesecake crust:
For the Cheesecake:
- Cream Cheese
- White Sugar
- Large Eggs
- Orange Zest
- Orange Juice
Orange Sour Cream Layer:
- Sour Cream
- Powdered Icing Sugar
- Orange extract, optional
- Orange gel food coloring <– this set of food coloring has lasted me forever and I love that it creates highly saturated colors with just a drop

Tip: swap out the graham cracker crumbs with animal crackers for an even sweeter and more nostalgic treat!

How to Make Orange Creamsicle Cheesecake Bars
Preheat the oven to 350F
Using a food processor (or ziplock bag with a rolling pin) crush up 1 bag of graham crackers to fine crumbs.
Place the graham cracker crumbs in a medium-sized bowl and mix with the melted butter until completely combined.
Grease and line a 8″ x 8″ cake pan and then firmly press the crust into the pan.
Bake the crust for 10 minutes.
Remove the crust from the oven and reduce the temperature to 300F
In a large bowl, combine the cream cheese and sugar with a mixer, about 2 minutes.
Add the eggs one at a time, then the orange zest and juice, beating after every addition.
Pour this cheesecake layer over the baked crust and smooth down with an offset spatula.
Bake until cheesecake is golden at the edges and doesn’t jiggle in the center, about 30-40 minutes.
Remove from the oven and allow to cool for 20 minutes.
Increase the oven temperature to 325F
In a large bowl, beat together the sour cream, powdered icing sugar, orange zest and orange food coloring.
Pour the orange layer over the cooled cheesecake layer and smooth down with an offset spatula.
Bake for 10 minutes.
Let cool to room temperature before placing in the fridge to complete setting.
When ready to serve, cut into bars and top with a dollop of whipped cream and a sliced orange.

For the graham crust:

- 2-3 drops of orange gel food coloring

Instructions

This recipe is very deceiving (the printable version at least.. in a pinch looking for an easy recipe & didn’t have time to read the entire blog part). But it says “no bake” and then you bake it 3 different times. And also says “cook time 10 minutes” but you bake it for 10 mins then another 30-40 mins then another 10 mins. Sounds like it will come out good though.. just will take longer than expected.
