Instant Pot Swedish Meatballs Recipe

Simply the best way to enjoy Swedish meatballs without getting stuck for hours afterwards in a maze of make-it-yourself furniture and coming home with yet another set of allen keys.

Known in Sweden as köttbullar, Swedish meatballs are tender, fall-apart meatballs are slathered in a rich, creamy and tangy yet buttery gravy.

This is one of my family’s favorite easy comfort meals but its decadent enough to serve as a fancy meal on a special occasion.

For this recipe, we made homemade Swedish meatballs and whipped together a simple homemade gravy, all completely cooked in the Instant Pot.

However, many grocery stores sell frozen, pre-made Swedish meatballs so if you want to save a bit of time, you can use those instead and focus your effort on just whipping up the homemade Swedish gravy.

You can toss in some veggies (peas, chopped carrots, broccoli, bell peppers, etc) or serve with any of the below suggested sides to make this Instant Pot Swedish Meatballs recipe into a full meal.

What to Serve with Swedish Meatballs:

  • serve overtop of egg noodles
  • serve a side of sautéed cabbage
  • add a simple side salad
  • mashed potatoes or mashed cauliflower
  • or simple white rice.

Instant Pot Swedish Meatballs FAQs

Can this recipe be made in the Crockpot? Yes! You will need to double the recipe to make this work as your Crockpot has more surface area than an Instant Pot. Saute the meatballs in a pan first as you stir together the sauce ingredients in the Crockpot. Add the meatballs and then cover with the lid. Cook on low for 3 hours or on high for 1.5 hours.

How to store Swedish Meatballs: This recipe can be prepared and stored in an airtight container in the fridge for up to 4 days. Reheat in the microwave with a damp piece of paper towel overtop.

Can Swedish Meatballs and Gravy be frozen? Yes, you can freeze this recipe in a ziptop freezer bag or freezer container for up to 2 months. (This set of freezer containers is a crazy bargain.) Allow to thaw completely in the fridge before heating. You may want to add a couple ice cubes if reheating in the microwave.

How to Make Swedish Meatballs in the Instant Pot

Combine the beef, pork, minced onion and seasoning until thoroughly combined.

Add 1 cup of breadcrumbs and knead in until fully combined.

Knead in 1 egg. Adjust the texture to your personal preference with additional breadcrumbs or the addition of an egg yolk or whole egg.

Roll the meat mixture into 1.5 Tablespoon sized meatballs. (I used a cookie scoop to measure out the meat mixture.) Set each finished meatball in a clean container or on a plate.

Place the olive oil in your Instant Pot and set to “saute.”

Once the oil is hot, add the meatballs and brown well on each side, about 2 minutes for a total of 4 minutes.

Remove the meatballs then add the beef stock, flour, dill, salt, pepper and sour cream.

Whisk until the sauce is combined and then add the meatballs back to the Instant Pot.

Set the IP to saute and add the sour cream and dill. Simmer 4-5 minutes until thickened.

Instant Pot Swedish Meatballs

Ingredients

For the Homemade Swedish Meatballs:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 small onion, minced
  • 1/2 teaspoon Nutmeg, optional
  • 1/2 teaspoon Allspice, optional
  • Salt and Pepper, to taste
  • 1 cup breadcrumbs, or to personal preference
  • 1 egg, or more as needed
  • 2 Tablespoons olive oil, for frying

For the Swedish Meatball Gravy:

  • 1 Tablespoon All-Purpose Flour
  • 1 cup Beef Stock
  • 1 teaspoon Dill Weed
  • Salt and Pepper, to taste
  • 1/4 cup Sour Cream

Instructions

  10. Turn Instant Pot off and then remove the inner pot immediately to prevent the sauce from scorching.
  11. Serve the meatballs and sauce overtop of potoatoes or rice.

Notes
