Instant Pot Stuffed Pizza Peppers Recipe

I blame pizza lunches at school and Friday pizza nights growing up for my weekly pizza cravings.

Every week like clockwork, I crave all things cheesy and toppings-packed… but eating pizza every week isn’t exactly budget-friendly anymore. As a result, we’ve developed waaaay too much pizza-inspired recipes on the blog, from Pizza Donts to Pizza Sliders… even Pizza Roses.

This week, I’m bringing you a healthier take on pizza – Instant Pot Stuffed Pizza Peppers, filled with tender and fluffy tomato-garlic-flavored quinoa and topped with plenty of cheese and pizza toppings. (I’m a pepperoni, black olives and jalapenos girl, but you top with whatever you like.)

These quinoa-stuffed bell peppers are a healthy option to enjoy all of the flavors of your favorite pizza and make a great meal-prep option for an indulgent-tasting treat throughout the week.

To make these pizza-stuffed peppers in advance, prepare the quinoa mixture and fill the peppers but do not top with shredded cheese. Cover and refrigerate until ready to cook, then proceed with the recipe as written.

To freeze pizza-stuffed peppers, prepare them (with or without the cheese topping) then freeze in single layers in a ziptop freezer bag or your favorite freezer containers. (This set of freezer containers is a crazy bargain.) Thaw overnight in the fridge before cooking as directed.

  • Cheese Grater

How to Make Pizza Stuffed Peppers in the Instant Pot

In the instant pot, combine quinoa, water, tomato paste, garlic, salt, pepper and butter.

Secure lid and set IP to high for 3 minutes.

Natural release for 10 minutes, then remove lid and stir the quinoa to fluff up.

Remove the quinoa to a bowl and wash out the Instant Pot.

Place the trivet in the chamber of the Instant Pot and add 1 cup of water.

Core out the bell peppers and slice in half.

Scoop the quinoa filling into the bell peppers, then top with shredded cheese and preferred pizza toppings.

Place the stuffed peppers on the trivet (use a piece of tinfoil, if needed)

Secure lid and set IP to high for 10 minutes, then quick release when done.

Ingredients

  • 2 Sweet Bell Peppers
  • 1 cups Quinoa
  • 1 1/2 cups Water
  • 2 ounces Tomato paste
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Italian Seasoning
  • Salt and Pepper, to taste
  • 1 Tablespoons Butter, optional
  • 1/2 cup Shredded Cheese
  • Pizza Toppings of Choice

Instructions
