Kids’ Kitchen: Yogurt Bark
Can you ever have enough healthy breakfast ideas? Feeding the kids, I can sometimes feel like we’re in a bit of a rut, or like most truly healthy options aren’t that appealing to them. This Breakfast Yogurt Bark has been such a hit – not only is it super easy to make – they think they are having dessert for breakfast!
My daughter would eat the same thing for breakfast every day if I let her. While it makes life easier for me, I also want to encourage her to have a variety of options in the morning for both the nutritional benefits and also so I don’t get bored (since I tend to eat the same thing she eats).
This yogurt bark is an easy breakfast idea that she recently helped make. We whipped it up before she headed to bed last Thursday, and then on Friday morning we had a special breakfast treat to share with our daycare buddies!
This breakfast yogurt bark is inspired by those candy barks made with white chocolate, with a natural sweetness replacing the sugar high. You can mix in whichever special toppings you’d like – we went with berries, but you could even mix in some chocolate chips, granola, or sprinkles for a special breakfast treat!
How to Make Yogurt Bark
First, assemble your ingredients:
- 1 cup greek yogurt
- 1/2 cup fresh fruit of choice
- 2 Tablespoons honey, optional
- 1 Tablespoon coconut shreds, optional
You can also use toppings like cocoa nibs, chocolate chips, sprinkles, dried fruit, etc.
Yogurt Bark
Ingredients
- 1 cup greek yogurt
- 1/2 cup fresh fruit of choice
- 2 Tablespoons honey, optional
- 1 Tablespoon coconut shreds, optional
Instructions
- If using honey to sweeten your yogurt bark, add the greek yogurt & honey to a bowl and stir to combine.
- Line a cake tray with parchment paper for easy removal of your bark. Pour the greek yogurt into the cake pan and spread into an even 1/2" layer with an offset spatula (or using the back of a spoon).
- Sprinkle in your fruit. If you'd prefer, you can cut the fruit in half or into smaller bite-sized pieces before sprinkling onto the yogurt.
- Garnish with coconut shreds, crushed cereal, or chocolate chips.
- Place cake pan in the freezer for 2 hours, or overnight.
- When ready to enjoy, slice or break the yogurt bark into pieces and serve. The bark lasts about 10 minutes before it is melted.
