Today, we’re bringing you yet another Instant Pot Dessert – an Instant Pot Blackberry Cake that proves that you don’t need an oven to make a tender, flavorful cake. The batter comes together in minutes and the Instant Pot takes care of the rest. No preheating, no oven babysitting – just a beautiful, golden bundt cake that looks far more elaborate than it really is.

Instant Pot Blackberry Bundt Cake Recipe
Using my Instant Pot to make desserts is my favorite no-bake dessert hack when I am craving a fluffy baked cake or real cheesecake but cannot stand the thought of warming up the house by turning on the oven.
Our latest addition to our Instant Pot desserts is today’s Instant Pot Blackberry Bundt Cake. Grab your Instant Pot, a package of vanilla cake mix and some fresh (or frozen) blackberries and get ready to make a bakery-worthy bundt cake that is sure to impress.
This moist, fruit-studded dessert starts with a simple French vanilla cake mix, but is elevated by juicy blackberries that break down slightly as they cook, creating pockets of tart sweetness throughout.
The gentle pressure-steaming method locks in moisture, resulting in a soft crumb that melts in your mouth along with the delicate, homemade vanilla glaze which adds just enough sweetness to complement the fruit without overpowering the cake’s vanilla base.
Unlike our Instant Pot Strawberry Cake and Instant Pot Blueberry Cake, this Instant Pot Blackberry Cake uses a pre-made cake mix to make this an even easier option for a hot summer day. Not only do you not have to turn on the oven – you don’t have to spend any time digging in the baking cupboard or measuring out more than a handful of ingredients, giving you more time outside having fun with the kids as dessert takes care of itself.

What is the cake setting on the Instant Pot? Some of the newer models of Instant Pot (like the Lux 6qt or Ultra 6qt) actually have a cake setting! But, I’m working with two models that don’t have a dedicated cake setting – as I’m imagining most readers are, too. For a standard Instant Pot, just use the Manual Pressure Cooking setting for cakes.
What kind of bundt pan should I use in the Instant Pot? A 7-inch metal bundt pan is ideal. Make sure it fits comfortably on the trivet with room for steam to circulate. (Instant Pot even makes it’s own bundt pan for this very purpose!)
If you typically cook savoury dishes in your Instant Pot, you may want to look at purchasing some extra sealing rings to ensure that your cake doesn’t take on a savoury flavor from your other recipes.
Can I make this ahead of time? Yes, this blackberry bundt cake keeps well covered at room temperature for up to 2 days or refrigerated for 4 to 5 days.

Instant Pot Blackberry Cake Ingredients

How to Make a Bundt Cake in the Instant Pot
Cake Directions:
In a large bowl, mix together the vanilla cake mix, eggs, water, and oil, as called for on the box.
Gently mix in the blackberries. (Optionally, you can crush the blackberries before adding to ensure that you have plenty of blackberry flavor distributed throughout the cake.)
Grease and flour a 7 inch bundt pan and pout the batter into the bundt pan.

Place 1 cup of water in your Instant Pot and set the trivet that came with your Instant Pot inside.
Carefully place the filled bundt pan on top of trivet in the instant pot.
Close and seal the lid.
Cook on high pressure for 35 minutes, followed by a quick pressure release.

Carefully remove the bundt cake and let cool on a cooling rack for 30-60 minutes.
Use a knife to gently separate the cake from the sides of the bundt pan and empty the cake onto a wired rack with a cookie sheet underneath.
Vanilla Glaze Directions:
In a medium-sized bowl, whisk together all ingredients until smooth.
Pour the vanilla glaze over the bundt cake and allow to set for 20 minutes before serving.
