How to Make Honeyed Ricotta

The real hero for my Honeyed Ricotta Crostini recipe is that decadent honeyed ricotta, so I thought it deserved it’s own post! Today, I’m sharing with you not only how to make honeyed ricotta, but all of the delicious ways you can use this decadent spread!

Honeyed Ricotta Recipe
Honeyed Ricotta is a whipped ricotta cheese dip (or spread) that is sweetened with honey and often enhanced with other ingredients. It is often used as a fruit or veggie dip or used to top anything from sweet brunch items to savory lunch options (like pizza).
My version of honeyed ricotta lends itself generously to the sweet side with vanilla, honey and a hit of lemon zest, but you can spice things up – adding some paprika, or mixing in some herbs. You can swap out the vanilla extract for orange or even rose extract (make sure you use a good quality one, though).
Try my recipe as written and then next time, don’t be afraid to experiment and get a little creative!
Honeyed ricotta is surprisingly versatile – and thank goodness for that because it is lick-the-spoon delicious, so at least I have plenty of excuses to keep making this recipe over and over again!

Honeyed Ricotta FAQ
Can I use something else instead of ricotta cheese to make something similar? Yes, in a pinch you can use cottage cheese. First, drain the cottage cheese to remove the excess whey/liquid. Then whip up the curds that remain with a hand mixer before proceeding with this recipe.
You can alternatively make your own ricotta cheese with just whole milk and lemon juice – just be sure to drain it really well before using in this recipe.
How to store honeyed ricotta: Honeyed ricotta can be stored in an airtight container in the fridge for up to 4 days without any flavor or texture change. However, you may need to fluff it up or re-whip it after storing.
Can I freeze honeyed ricotta? I don’t recommend freezing things with soft cheeses, like ricotta or cottage cheese, as the texture will often change upon thawing. (That said, it is safe to freeze it.)
Ways to Use Honeyed Ricotta:
- Spread on crackers and top with your favorite sweet or savoury toppings

- Ricotta
- Honey
- Vanilla extract
- Lemon zest, to taste
Tip: mix in some herbs, or swap out the flavor extract for a new twist on this classic spread.

How to Make Honeyed Ricotta
Strain the ricotta to remove the whey.
Place the ricotta cheese in a large mixing bowl and add in the honey, vanilla extract, and lemon zest.

(You may want to add only half of the honey and lemon zest to begin with and just add until it tastes perfect for you.)
Stir all of the ingredients together well, until the ricotta cheese is smooth and the mix-ins are completely incorporated.

You can use immediately or store in the fridge for a day to let the flavors meld and become more pronounced.
Use within a week.
