What is poutine? For my non-Canuck readers, poutine is like a better version of potatoes and gravy. Fries, gravy and cheese curds, all delicious, providing an amazing texture contrast. It’s indulgent, comforting, and always leaves you wanting more.

Typically, you get a beef or mushroom-based gravy, and either mozzarella or cheddar cheese curds. The curds are squeaky and have a bit of bite, but they should be melty once you pour on the hot gravy. Everyone has their own opinions as to what the fries should be like, but in my opinion, you want a thick fry that’s crispy on the outside and soft and fluffy on the inside.
