To be completely honest with you, I usually skip lunch altogether or just grab whatever is quick or already available – which are rarely healthy options. My dream, grown-up version of myself has a giant fridge, preps salad ingredients every weekend, and leisurely enjoys giant meal-size salads every lunch time.
Eh, I’m about halfway there.
I’ve gotten better about cooking up a few extra chicken breasts on the weekend and whipping up at least a batch of soup and a homemade salad dressing. (Sometimes I’ll make egg or ham salad and even cut up some fresh fruit.)
I don’t aim to prep every single meal, but since lunchtime is my “problem area,” as long as I have some solid lunch options ready-to-go at the beginning of the week, I’m happy.
