A delicious and healthy Halloween recipe, this Garlicky Halloween Black Bean Spaghetti with Devilled Egg Eyes is a spooky meal perfect for a party or just a special family supper!
Healthy Halloween Supper Recipe
It’s no secret that Halloween is our family’s favorite holiday.
We really love to go all-out, with Halloween parties, a Halloween tree, and even themed Halloween lunch boxes for the month leading up to “the big day.” (OK, I only tend to send themed lunches once a week – it’s better than pizza day!)
While I love coming up with themed desserts, there’s only so much junk food that you can excuse away (even at Halloween), so I do try to put a healthy spin on some of my Halloween food ideas.
This delicious garlic-black bean spaghetti with devilled eggs is the perfect healthy Halloween meal.
It’s pretty simple and makes for great leftovers! The egg eyes may look super complicated, but you really just need two everyday kitchen materials to make them: cookie cutters and food dye.
I had such a blast making this spooky meal and Ella was thrilled when I served it up for supper. I could only imagine what her reaction would have been if she had opened up her Thermos at school to discover this!
You could use this method on plain hard-boiled eggs and incorporate into other lunch box or meal ideas, as desired.
I think this would make a great spooky appetizer for a Halloween party, and it will just be our little secret how easy these were to make 😉
Ingredients for Spooky Halloween Pasta
For the Deviled eyeballs:
- Hard boiled eggs
- Blue and Red food coloring <– this set of food coloring has lasted me forever and I love that it creates highly saturated colors with just a drop
- Jumbo black olives
- Garlic mayonnaise
- Unflavored gelatin glaze, optional
For the Black bean spaghetti:
- Explore Cuisine black bean spaghetti, cooked & drained
- Olive Oil
- Garlic, minced
- Cooked Egg Yolk, grated <– use the leftovers from eyeball eggs recipe
- Fresh herbs such as tarragon, parsley and/or chives, finely chopped
- Salt <– this is my all-time favorite
- Red Chili Flakes, to taste

Tip: leave out the gelatin glaze on the eggs, if desired. It just helps make the eggs a bit more stable (like for parties).
Kitchen Tools You May Find Helpful:
- 1 large sharp, thin tube (to make the iris) <– I used different sized cookie cutters
- 2 small sharp, thin tube (to make the pupil)
- Fine paintbrush
- Pastry brush <– I like these because they are one solid piece and don’t have removable heads for bacteria to get trapped underneath. Plus they are heat-resistant and have a lifetime warranty.
- Colander
- Heavy stockpot or Dutch Oven <– highly recommended for even cooking and seamlessly transferring recipes from the stove to the oven
How to Make Spooky Spaghetti
To make eyes, first form the iris by using the larger tube to cut top of hardboiled egg in a circle. Remove the egg white plug. Paint egg white plug with diluted food coloring to look like an iris. Let dry.
To form pupil, use smaller tube to cut out a place for the pupil in the painted iris. Use the same tube to cut a pupil out of the black olive. Place the olive pupil into the iris.
Cut off the bottom third of the egg so it will nestle in the spaghetti spoon. Reserve any hard-boiled egg yolks for spaghetti recipe.
Scoop out small amount of egg yolk from top of egg to make room for mayonnaise. Squirt garlic mayonnaise into the hollow top of hard-boiled egg, then replace iris plug.
For “bloodshot eyes”, use food coloring to paint thin lines around the iris. Let dry.
Finish by brushing a light coat of slightly thickened gelatin glaze over the entire eye to give an authentic glossy finish. Set aside.
In medium bowl, combine olive oil, garlic, herbs, salt and chili flakes. Add spaghetti and toss. Sprinkle with grated egg yolk.
Arrange spaghetti in decorative serving spoons and place deviled eyes in center for the spookiest suppertime you’re family has ever seen!
