Easy Sloppy Joe Sliders
An easier way to make Sloppy Joes for a crowd, this Taco-seasoned Sloppy Joe Casserole is a fun take on sliders that your family will love!
Sloppy Joe Sliders Recipe
My parents only served us Sloppy Joes once when I was growing up.
I remember them as being delicious and saucy… and I remember my siblings getting more of the sandwiches on their shirts and the floor than they did in their mouths. So while I totally don’t blame any parent for skipping the Sloppy Joe, for those of us who are willing to brave the mess: this recipe is for you!
A delicious saucy Sloppy Joe with plenty of seasoning and a good dose of hidden veggies, plus ooey-gooey melted cheese and buttery sandwich buns. I also like adding some onions and garlic to the pan before adding in the beef to cook, but this recipe is onion-free as we were bringing it to a potluck with an onion allergy. You can add bell peppers, too.
This recipe is perfect for meal planning or prepping ahead. I cook a couple pounds of ground beef all at once then mix it with tomato sauce, diced jalapenos and tomatoes, and then freeze half for a future busy night. It’s perfect for Taco Tuesday, adding to Taco Pasta, topping a Taco Salad, or making another batch of these Sloppy Joe Sliders!
I prep the sandwiches right up to the point of baking, and then refrigerate overnight. (If I’m prepping a couple days in advance, I tend to just store the beef in a container and save the sandwich assembly closer to the serving time to prevent the sandwiches from becoming soggy.)
This Sloppy Joe recipe is so incredibly easy to make and makes a great option for parties or potlucks – as long as you don’t mind a little mess!
Ingredients for Sloppy Joe Sliders
- 1 sheet sandwich rolls
- 1lb ground beef, cooked
- 9-12 slices mozzarella cheese
- 1/4 cup diced jalapenos, optional
- 1-8oz can chile-style tomatoes
- 1-10oz can tomato sauce
- 1 Tablespoons taco seasoning
- 1/2 cup butter, melted (optional)
Tip: swap out the taco seasoning for your preferred seasoning. Add onion and garlic to the skillet before cooking the beef for even more flavor.

- 12″ x 8″ casserole dish
- Sharp bread knife
- Frying pan or skillet
- Measuring cups and spoons

How to Make Sloppy Joe Sliders
Preheat oven to 350F
Place the ground beef in a frying pan or skillet and cook throughly, approximately 8 minutes.
In a medium-sized bowl, combine the beef, jalapenos, tomatoes, sauce and seasoning.
Cut the sandwich sheet in half through the middle to create two “slices” of sandwich sheet.
Place the bottom half of the sandwich sheet in the casserole dish.
Fold the ground beef mixture overtop of the bottom half of the sandwich sheet and place the mozzarella overtop evenly.
Add the top half of the sandwiches, and pour over the melted butter, if using.
Cover the casserole dish with tinfoil and bake for 20-30 minutes until the butter has completely absorbed into the rolls.
Cut and serve.

- 2 teaspoons minced garlic, optional
- 1lb ground beef, cooked
- 9-12 slices mozzarella cheese
- 1/4 cup diced jalapenos
- 1-8oz can chile-style tomatoes
- 1-10oz can tomato sauce
- 1 Tablespoons taco seasoning
- 1/2 cup butter, melted (optional)
