These colorful double chocolate chip cookies might not scream unicorn to you immediately, but all that tells me is that you’re not surrounded by all things UNICORN lovers.

Okay, I just took a break from writing up this recipe to take photographic proof of my full immersion into the girl mom lifestyle.
Whenever I dust my house, the dusting rags are coating in glitter.
Half of my laundry is hang-to-dry princess clothing.
It’s a lifestyle.
So, whenI came across these unicorn chocolate chips a few weeks ago and knew they were a 100% necessary purchase so we could bake up some fresh unicorn-inspired cookies. (They’d also be fun to use for a no-bake unicorn bark, unicorn granola bites, unicorn muffins, etc.)
My daughter loved getting to help me whip up these cookies and getting to add as much “unicorn magic” (those chocolate chips and sprinkles) as she wanted.

- If you can’t find pastel chips, use chopped up candy melts in a variety of colors
Freezing Instructions: You can freeze this unicorn cookie dough before baking by forming the dough into logs or discs and wrapping tightly with plastic wrap before placing in an airtight freezer bag or your favorite freezer containers. (This set of freezer containers is a crazy bargain.) Use within two months for best flavor.
How to store unicorn cookies: these cookies can be stored at room temperature for up to a week, or refrigerated for up to two. Bring the cookies to room temperature before serving.

Ingredients for Double Chocolate Unicorn Cookies
- Butter, softened at room temperature
- White Sugar
- Brown Sugar
- Eggs

How to Make Unicorn Chocolate Cookies
In a large bowl, beat the butter and sugars together with an electric mixer.
Add in the eggs, vanilla extract and molasses and beat until fully combined.
In a medium-sized bowl, stir together the flour, cocoa powder, baking soda and cream of tartar.
Beat half of the flour mixture into the butter mixture, then the second half.
Stir in the chocolate chips and sprinkles until completely combined.
Refrigerate the cookie dough for at least 1 hour.
Pre-heat oven to 325F.
Line two cookie sheets with parchment paper.
Portion out the cookie dough onto the prepared sheets with a cookie scoop.
Bake for 12-15 minutes, until tops begin to crack and edges are set.
Makes approximately 40 cookies.
