Today’s recipe for Chipotle Lime Shrimp is smoky, sweet and zesty – and 10x better than anything you’ll find at a local restaurant for 3x the cost for making it at home.

Chipotle Lime Shrimp Recipe
Chipotle and lime go together like peanut butter and jelly.
It’s a classic flavor combination, especially when it comes to shrimp, thanks to it’s smoky, spicy and tangy flavor profile. With the addition of honey in our recipe, we add in a sweet element that makes these chipotle lime shrimp utterly irresistible.
And did I mention? It’s ready in less than 10 minutes! That’s faster than you can drive to your local Mexican restaurant, so why not make this recipe at home?
Chipotle Lime Shrimp Variations:
- Add a teaspoon of cumin for smokiness
- Use canned chipotles plus a bit of the adobo sauce from the can for a saucier and spicer shrimp
- Serve with our avocado lime dressing as a dip or drizzled garnish
- Serve with a fresh salsa like pico de gallo, pineapple salsa or mango salsa
- Make as tacos or taco bowls
This recipe traditionally calls for tequila, but I’m making it for a family so even though the alcohol burns off with cooking, it would still leave a bit of tequila flavor so I decided not to incorporate it into our recipe. If desired, add a shot or two to the marinade.
What kind of shrimp to use for chipotle lime shrimp: Larger shrimp can be labeled as “U 10” meaning under 10 per pound or labeled as “Colossal” which is typically also under 10 per pound. As a good rule of thumb:
- Jumbo = 11/15
- Extra-large = 16/20
- Large = 21/30
- Medium 31/35
- Small 36/45
- Mini or Salad Shrimp is anything smaller.
When using frozen shrimp, be sure to thaw, rinse and pat dry before using.
How to store leftover shrimp: store leftover shrimp in an airtight container in the fridge for up to 2 days. Reheat in the oven at 350F for 10 minutes or in the air fryer for 4 minutes.
Can chipotle lime shrimp be frozen? Yes, you can freeze leftover shrimp in the freezer for up to 3 months in an airtight ziptop freezer bag or freezer container. (This set of freezer containers is a crazy bargain.)

- Extra virgin olive oil
- Fresh squeezed lime juice
- Lime zest
- Chipotle chili pepper
- Smoked paprika
- Garlic powder
- Onion powder
- Honey
- Salt and black pepper, to taste
- Extra-large peeled deveined shrimp

Tip: I prefer to use four 12-15” metal skewers for this recipe. If using wooden skewers be sure to soak for at least 30 minutes before adding shrimp to prevent burning.

How to Make Chipotle Lime Shrimp
Whisk marinade ingredients together in small jar with lid.
Pour one-half of marinade mixture into large non-reactive bowl and reserve the other half in the jar for serving.
Add shrimp to bowl and toss to coat. Marinate at least 15 minutes but not longer than 30 minutes.
Thread the shrimp onto skewers, 5-6 per skewer.
Preheat grill over medium-high heat. Reduce heat to medium. Lightly oil grill grate. Cook shrimp until no longer translucent, 3-4 minutes per side. Watch carefully as shrimp cook very quickly and will become rubbery if overcooked.
Remove from grill onto a serving platter. Drizzle lightly with reserved marinade.
Serve immediately garnished with fresh parsley sprigs and lime slices or as desired above.

- 1 Tablespoon lime zest

- 1/2 teaspoon smoked paprika

- 1 teaspoon onion powder
- 1 Tablespoon honey
- Salt and black pepper, to taste
- 1-1/4 lbs. extra-large peeled deveined shrimp
