Baked Lemon Garlic Shrimp Recipe

Longtime readers know that I try to serve seafood to my family at least once a week.

My “excuse” is usually that it contains lots of nutrients that aren’t as easily obtained from other foods… but to be honest, there is something luxurious about serving even a super simple seafood recipe like this for dinner.

This lemon garlic shrimp recipe tastes like something you could get in a fancy restaurant (at a premium price) but takes less than 10 minutes to throw together and about another 10 minutes to bake. (The secret is in letting it marinate overnight in the fridge to really let the shrimp soak in all of the flavors from the lemon, garlic and spices.)

Lemon brightens the dish while serving to also counteract the somewhat briny flavor of the shrimp, allowing the gentle sweetness of the shrimp to be more noticeable, while the garlic balances out the richness of the olive oil, resulting in a wonderfully balanced dish with an amazing flavor profile.

This low-maintenance yet luxurious dish can be prepared on the stove in a skillet instead of being baked – cook for 6-8 minutes over medium heat.

What to Serve with Lemon Butter Baked Shrimp:

  • serve the shrimp over potatoes
  • toss with cooked pasta – the butter sauce can serve as the dressing or you can serve with an Alfredo pasta
  • serve over cauliflower rice (or regular rice)
  • serve with a generous side salad like our Brussels sprouts salad
  • roasted vegetables make a pairing with lemon garlic shrimp
  • crusty baked bread is great to soak up all the buttery sauce
  • for a decadent meal, serve overtop of steak (like we did for our Parmesan Steak and Shrimp)

What kind of shrimp do I need to use to make lemon garlic shrimp? You can use shelled or shell-on shrimp, jumbo or salad-sized, raw or cooked. As you can see in these pictures, I used small, shelled and pre-cooked shrimp. All you do is adjust the cooking time slightly to account for the type of shrimp you are using.

How to store lemon garlic shrimp: baked lemon garlic shrimp can be stored in the fridge for 3 days, frozen for up to 3 months. Thaw overnight before reheating. (This set of freezer containers is a crazy bargain.)

How to Make Baked Lemon Shrimp

Rinse and place shrimp in a 8″ x 8″ casserole dish.

Drizzle the lemon juice and olive oil over the shrimp. Stir to coat completely.

Sprinkle on the garlic, oregano, paprika, salt and pepper. Stir to coat completely.

Refrigerate overnight or at least 2 hours to allow shrimp to marinate.

Preheat oven to 350F.

Bake shrimp for 12-15 minutes.

Serve shrimp on top of cauliflower rice or cooked pasta.

  • 1 lb Shrimp
  • 2 Tablespoons Lemon Juice
  • 1 1/2 Tablespoons Olive Oil
  • 2 Garlic Cloves, minced
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • Salt and Pepper, to taste
  • Parsley, optional for serving

Instructions
