Instant Pot Tuscan Chicken
A creamy and delicious Instant Pot chicken recipe, this Instant Pot Tuscan Chicken comes together in less than 20 minutes for an amazing restaurant-worthy meal.
Instant Pot Tuscan Chicken Recipe
Usually when I want to make a crispy chicken thigh recipe served with a creamy sauce, I use my cast-iron skillet. I have my method down-pat and the results are always delicious and flawless.
However, I am determined to figure out a way to make almost all of our family’s favorite meals Instant Pot-friendly, so I set out to make a creamy Italian chicken recipe completely in the Instant Pot.
We use the Instant Pot to brown the chicken, thicken the cream sauce, cook the entire recipe, and even wilt the spinach. If you want to serve your Tuscan chicken with pasta, you can even cook the pasta in the Instant Pot, too!
This Instant Pot Tuscan Chicken is hands-down one of my favorite Instant Pot recipes we’ve ever made.
Do I have to use chicken thighs? Not at all! You can use chicken breasts or chicken tenders for this recipe. If you want a Tuscan chicken pasta, you can even cut your chicken breasts into strips for easier serving.
How do I add pasta to this recipe? You can either cook your pasta separately as you normally would, or add it to the cream sauce before adding the chicken back into the Instant Pot, before sealing and cooking for 4 minutes.
Can I use different vegetables in this recipe? Absolutely! Use red peppers (fresh or roasted) or sun-dried tomatoes in place of the tomatoes. Swap out the spinach for kale. Add mushrooms or jarred artichoke hearts, etc.
Hot tip: Most Tuscan Chicken recipes use sun-dried tomatoes but I find that a lot of kids dislike the chewy texture, so I opted for fresh tomatoes. If you are using sun-dried tomatoes in this recipe, you can bump up the flavor even more by swapping the oil in the sun-dried tomato jar for the olive oil called for in this recipe.
What to Serve with Tuscan Chicken:
- Pasta (plain or just a bit of oil or butter – that creamy sauce will coat it perfectly)
- Rice – plain or our Spanish-style Rice would pair well with this

Instant Pot Tuscan Chicken Ingredients
- Olive oil – no need to use extra-virgin olive oil for this recipe
- Butter
- Minced garlic
- Chicken thighs or chicken breasts – I prefer mine with skin to add that crispy golden skin to the dish
- Chicken broth – grab our homemade Instant Pot chicken broth recipe here
- Heavy cream
- Tomatoes – fresh or sundried
- Spinach – can swap in kale, just remember to cook a minute longer
- Parmesan cheese, shredded – do not use the gross powdery stuff

Tip #2: to spice up this recipe, you can add some crushed red chile flakes to the cream sauce.

How to Make Tuscan Chicken in the Instant Pot
Pat your chicken thighs dry and season with Italian seasoning, to taste.
Place the olive oil and 1 Tablespoon of the butter in your Instant Pot and select the “sauté” setting.
Once the butter is melted, add the minced garlic and chicken and brown the chicken, about 4 minutes on each side. They should be fully cooked after the full 8 minutes, but it’s okay if they aren’t quite perfect as they will cook in the sauce again.
Remove the chicken to a plate or cutting board.
Add the broth, 1/3 cup of the Parmesan and heavy cream to the Instant Pot. Whisk together and allow to come to a quick boil.
Turn off the sauté setting and nestle the chicken into the sauce.
Secure the Instant Pot lid and select the manual setting for 4 minutes.
Natural release.
Add the spinach and tomatoes to the cream sauce and sprinkle remaining Parmesan on the chicken.
Place the lid back on the Instant Pot and leave for 2 minutes, to allow the spinach to wilt and the Parmesan to melt.
Remove the lid and serve as desired. The sauce is delicious over pasta, rice, cauliflower rice, etc.
