Pasta Salad with Honey Balsamic Dressing
My main justification for eating out is getting to try all of the fun flavor combinations professional chefs come up with.
This pasta salad is inspired by a fall-themed spinach salad that I had at Abruzzi Ristorante in London, Canada. It was served with a delicious white balsamic honey vinaigrette that transformed a rather plain salad (berries, pecans and spinach, if I remember correctly) into a lick-your-plate good salad.
(And when it comes to salad, that’s saying something!)
I had to attempt my own version of the dressing for home use, and decided to switch things up and serve the dressing on a fresh pasta salad. Raspberries and mint are a fun summer touch, but you can leave out the mint if you’re not a fan.
This fun summer pasta salad is refreshing, delicious and just the right amount of unexpected.
The honey balsamic dressing is amazing and you’ll be looking for excuses to make salads just to enjoy it. The mint adds a nice pop of sharp flavor, while the raspberries help round out the bitterness of the balsamic vinegar.
White balsamic is 100% necessary in this recipe. It has a cleaner aftertaste than darker, purple balsamics which is achieved by cooking the vinegar low and slow in production. It’s a little less sweet than regular balsamic, where the addition of honey comes in handy.
Ingredients for Raspberry Pasta Salad

2 cups cooked macaroni pasta, cooled

2 sprigs fresh mint

1/2 cup raspberries

2 Tablespoons white balsamic vinegar

1 Tablespoon honey

Salt & Pepper, to taste
Tip: double or triple the dressing and keep it on hand for your next salad – you won’t regret it.

Raspberry Mint Pasta Salad
Ingredients
- 2 cups cooked macaroni pasta, cooled
- 2 sprigs fresh mint
- 1/2 cup raspberries
- 2 Tablespoons white balsamic vinegar
- 1 Tablespoon honey
- Salt & Pepper, to taste
Instructions
- Combine the white balsamic and honey in a small bowl. Add a sprinkle of salt and pepper, taste and adjust to your preferences.
- Pour the dressing over the pasta and stir to coat thoroughly.
- Rip up the leaves of mint and add to the pasta, then gently add the raspberries to prevent crushing.
- Allow the pasta salad to marinade in the fridge before serving. The longer it marinades, the sweeter the pasta salad becomes.
