Apple Spice Granola

I’ve tried for years to get into better habits with breakfast and you’d think it would be natural and normal by now – but it’s really not.
My body just isn’t hungry in the mornings and if it wasn’t for my daily routine of sitting down with my daughter for breakfast, I probably wouldn’t eat until noon.
But the flip side is that when I don’t eat breakfast I’m ravenous and snack on just about anything I can get my hands on – I can’t make lunch fast enough! And if lunch time gets waylaid by a long phone call or an unexpected errand – then I hit a major crash and hanger looms in the distance.
To help make breakfast more enticing, I love creating delicious breakfast recipes like this apple spice granola.
This easy apple spice granola recipe is perfect for fall. I sprinkle some over yogurt in the morning and it’s like having a slice of apple pie a la mode for breakfast with a satisfying crunch and mouth-watering apple flavor.
This granola is great for mornings on the go – just add a bit of yogurt or milk when you’re ready to enjoy and dig in!
This recipe makes enough for me to enjoy a half cup every morning for a week, but you could easily double or triple this recipe as long as you store it in a sealed airtight container.
Ingredients for Apple Spice Granola
- 2 cups regular oats
- 1 Tablespoon apple spice
- 1/2 cup apple chips, chopped
- 2 Tablespoons coconuts flakes
- ¼ Cup chopped almonds
- ¼ Cup dried prunes or other dried fruit (we often substitute dates)
- ¼ Cup honey
- 2 Tablespoons brown sugar
- 2 Tablespoons almond oil
- Pinch of salt
Tip: because this is a recipe that relies on several different (delicious) components, taste each one to ensure it enhances – and doesn’t ruin- the recipe.

How to Make Fall Granola
Preheat oven to 300°F and arrange parchment paper in a baking sheet.
In a saucepan over medium heat mix the brown sugar, honey, almond oil, and salt. Stir until well incorporated, then remove from the heat.
In a large bowl mix the oats, coconut flakes, almonds, and prunes.
Coat the dry ingredients with the honey mix.
Spread over the baking sheet.
Take to the oven for 25 minutes or until golden.
Remove from the oven and set aside to cool down.
Enjoy and save some for later in a sealed airtight container.
