Strawberry Margarita Cupcake Recipe
Boozy desserts are one of my favorite things to serve at parties. You get a little kick and flavor of booze without much of a buzz – so you get the party vibe even between drinks.
Today’s Strawberry Margarita Cupcake is a zingy, sweet, summer cupcake with the fresh, juicy flavor of strawberries cut with a hit of lime juice and a light (but noticeable) infusion of tequila.
If you want to add a bigger hit of booze to your cupcake, you can add these little cocktail pipettes to your cupcakes – guests just squeeze the tequila into the cupcake right before enjoying. (This prevents the cupcakes from getting soggy while also giving guests control of how much of a tequila flavor their cupcakes have.)
Of course, you can also swap out the tequila for white rum for a Strawberry Daiquiri cupcake, if tequila isn’t really your thing.
While our strawberry margarita cupcake is made from scratch, you can use a boxed strawberry cake mix and just add in the lime juice and tequila, if desired.
Just a note on using strawberry extract, which I recommend in this recipe: For my Strawberry Vanilla Cupcakes, I made our frosting with strawberry juice that I extracted by boiling strawberries in water and straining. That method will work for this recipe, but it’s a lot easier to use the strawberry flavor extract and I find it easier to control the flavor using the extract as it’s more concentrated than any homemade juice. (Not to mention, fresh strawberries can vary in flavor intensity – sometimes they are downright flavorless.)
Can these strawberry margarita cupcakes be frozen? Yes, you can freeze the unfrosted cupcakes by placing in an airtight freezer bag or your favorite freezer containers for up to two months (this set of freezer containers is a crazy bargain). You can also freeze the frosting and mix well before using.
I often order my liquor from Drizly because they have a quick delivery time (sometimes within 40 minutes) and no expensive mark-ups. Purchasing from them supports local retailers, too. You can order the tequila needed for this recipe here.

Kitchen Tools You May Find Helpful
- Electric mixer <– this is a great hand mixer if you don’t want to make the investment into a stand mixer
- Cupcake pan
- Measuring cups and spoons
- Large mixing bowl
- Piping bag with large star tip <– a basic piping set will have all you need
- Cupcake Scoop
- Measuring cups and spoons
- Spoon or Spatula <– I like these spatulas because they are one solid piece and don’t have removable heads for bacteria to get trapped underneath. Plus they are heat-resistant and have a lifetime warranty.
How to Make Strawberry Margarita Cupcakes
Place 18 cupcake liners in two cupcake pans. Set aside.
Pre-heat oven to 350F.
Sift all-purpose flour into a mixing bowl.
Add baking powder, baking soda and salt to the flour and whisk place to the side.
In a second large mixing bowl, stir together all wet ingredients, including strawberries, for 2 minutes until thoroughly blended.
Combine the wet and dry ingredients.
Fill each of the cupcake liners ¾ full with the strawberry cake batter.
Bake cupcakes for 18-22 minutes, until a toothpick inserted the center cupcake comes out clean. Allow to cool completely.
Once the cupcakes have cooled, poke holes into the tops of the cupcakes and use a pastry brush (or BBQ brush) to brush the tequila all over the cupcakes. (Alternatively, you can dip the top of each cupcake into a bowl of tequila.)
Tequila Lime Frosting Directions:
Place all ingredients in a large bowl and beat with an electric mixer, starting on low speed and then increasing slowly to medium speed.
After two minutes, the frosting should be light and fluffy. Adjust the texture and flavor as needed by adding more powdered sugar or tequila. (You can also add cream if you don’t want to increase the tequila amount but find the frosting too stiff.)
Scoop the tequila lime frosting into a piping bag fit with a large star tip. Top each cupcake with the frosting and then garnish with a lime slice, strawberry slice and an optional piece of straw.
