Cookie Butter Popcorn Recipe
If I could only pick two treats to have for the rest of my life, first, I would cry at the thought of all of the treats I’d never have again… and then I’d pick kettle chips and cookie butter.
Cookie butter is one of those treats I find myself returning to again and again – I just never get sick of it, whether I’m enjoying it straight-up off a spoon or including it in treats like today’s Cookie Butter Popcorn.
This rich cookie butter popcorn is sweet and caramel-ly, with a subtle hint of cinnamon, and a crunchy candy shell coating light, chewy popcorn. The cookie butter coating is satisfyingly crunchy and not sticky.
Unlike more complicated candied popcorn recipes, like caramel corn, there’s no need for candy thermometers or complicated steps—just a few pantry staples and a little patience while it sets.
If you don’t want to mess with making a candy coating, you can simply melt white chocolate and stir in the cookie butter to use as a coating – just note that the flavor profile and texture will be very different, but still delicious.

How long can cookie butter popcorn be stored? Cookie butter popcorn is best enjoyed within the first 3-5 days of making it. Store in an airtight container at room temperature. If your home is especially hot or humid, you may want to keep it in the fridge and allow to come slightly to room temperature before serving.
Can you freeze homemade cookie butter popcorn? Yes! Fill an airtight ziptop bag and freeze your popcorn for up to a year.
What if I don’t have an airpopper? Ours was only $15 and considering a box of microwave popcorn is about $5 for a package of 6 bags, our airpopper paid for itself within 18 uses (bags of popcorn kernals are suuuuper cheap and last us for months).
What is the best popcorn to use for cookie butter popcorn? Yellow popcorn is the most common, but if you want that fluffy popcorn just like they have at gourmet popcorn stores (like Garret’s) you will want mushroom popcorn kernals.

- Air Popper <– this is the popcorn popper we’ve used for over 5 years, I like that it doesn’t need oil to pop and is light and fluffy (unlike oven-popped popcorn)
- Measuring Cups and Spoons
- Saucepan
- Wooden Spoon or Spatula <– I like these spatulas because they are one solid piece and don’t have removable heads for bacteria to get trapped underneath. Plus they are heat-resistant and have a lifetime warranty.

How to Make Cookie Butter Popcorn
Pop your popcorn as desired. Air-popped is best, but butter-free microwave popcorn works.
Spray a cookie sheet with cooking oil and set aside.

Place the corn syrup and white sugar in a small saucepan over medium heat. Stir continuously, until the white sugar is completely melted and the mixture takes on a caramel appearance, about 3-4 minutes.

Add the Cookie Butter and stir in completely. Continue to cook for one more minute before removing from heat.
Immediately pour the Cookie Butter mixture over the popcorn and stir to coat completely.

Spread the Cookie Butter popcorn over the cookie sheet in a single layer. Let set for 4 hours or overnight until no longer tacky to the touch.

Break up the Cookie Butter popcorn and store in an airtight container until ready to serve.

- 1/2 cup Corn Syrup
- 1/2 cup White Sugar
- 1/2 cup Cookie Butter
Notes
After popping your popcorn, be sure to remove any unpopped popcorn kernels, as they will be impossible to detect once the coating is added (and can hurt when bitten into).
