Copycat Starbucks Acai Refresher Recipe

Starbucks Strawberry Acai Refreshers are one of my favorite summer indulgences – especially when I’m stuck spending my day on errands and need something refreshing to keep me going in the summer heat.

I’m honestly a little embarrassed about how much money I spent buying these Strawberry Acai Refreshers now that I know how easy they are to make at home!

Our recipe for Strawberry Acai Refreshers is sweet, slightly tangy and flavor-packed. You’ll notice that in my pictures, we’ve topped the glasses with some coconut milk. This is how to make a Starbucks Pink Drink (our favorite twist on a Strawberry Acai Refresher) – just stir the coconut milk in for a creamy version of the Starbucks acai refresher. Omit the coconut milk if you’d prefer a straight up Strawberry Acai Refresher.

While buying all of the ingredients may be a bit indulgent at first, you’ll break even after you’ve made just a few of these sweet and fruity refreshers at home.

Despite what many people assume, Starbucks Refreshers are not caffeine-free. They contain green coffee bean powder. This can be swapped out for green tea or omitted altogether for a caffeine-free alternative.

For my Canadian readers, Welch’s white grape juice has become unavailable in the last year due to the passing of a law that ensured that most grapes were designated for use in wine production. Welch’s pulled out of the Canadian market as a result and there doesn’t seem to be any other brands of white grape juice to fill that gap. For an alternative, you can grab a bottle of carbonated white grape juice in the Kosher section of most grocery stores. Pop the cork, enjoy a carbonated glass or two with the kids, and then allow the rest of the bottle to go flat for use in this recipe.

What is green coffee powder? Green coffee beans are simply unroasted coffee beans that add a more acidic bite than regular coffee beans. The powder is similar to espresso powder in how it’s used. It is still a niche health product and quite pricey, so it can be replaced by using a shot of strong green tea or you can omit it altogether for a caffeine-free version of our strawberry acai refresher. (I tend to omit it altogether myself so that the whole family can enjoy the pitcher of strawberry acai refreshers.)
